The catechin polyphenol called epigallocatechin gallate (EGCG), which is the one of the strongest antioxidant agent to be found till date, resides in the leaves of the camellia plant. When these leaves are kept out to dry, this anti-oxidant reacts and gets converted into other compounds. Although, when the green tea is being processed, the leaves are steamed instead.
