<description>If you AND rsquo;ve ever enjoyed gumbo, you AND rsquo;ll be familiar with the unique vegetable called okra (scientific name Abelmoschus esculentus or Hibiscus esculentus). In various parts of the world where okra seeds have been sown, the vegetable is known as Ochro, Okoro, Quimgombo, Quingumbo, Ladies Fingers, Gombo, Kopi Arab, Kacang Bendi, Bhindi, Bendi, Bamia, Bamya or Bamieh. The gumbo, the thick, savory soup New Orleans made famous, takes its name from the Swahili word for okra.

Okra seeds were first cultivated by Egyptians on the alluvial banks of the Nile around the 12th Century before Christ. Traders took okra seeds with them throughout North Africa to the Mediterranean, the Balkans, and India. The African diaspora brought okra seeds to Brazil, Dutch Guinea, and eventually to New Orleans.

People brought to the Western Hemisphere as slaves used ground okra as a part of their diet. Okra seeds were pulverized as used as a coffee substitute by Confederate soldiers during the American Civil War, when normal coffee imports were cut off through Union blockades.

Okra is prized by vegetarians and allergy-conscious diners who use it to create thick stews without the use of animal products and/or flour. Tender and flavorful, it is deserving of center stage in its own recipes. Here are some recipes starring okra:

Fried Okra

1 lb okra
salt
water
cornmeal
salt and pepper
lard, olive oil, or peanut oil

Slice okra 1/4" thick. Salt heavily and cover with very cold water. Refrigerate one hour. Rinse and drain well. Roll in cornmeal seasoned with salt and pepper. Fry in deep skillet with 1/2" of fat till brown and crisp. Drain on paper towels. Enjoy.

Okra Pizza

<description>Chicken gumbo soup, the name itself can be deceiving. I've seen it made from everything including Campbell's gumbo soup mix. Now, we all know that's not real chicken gumbo soup, but it sure makes a quick meal. Obviously, you need chicken, preferably skinless and cut up in smaller pieces. 

For the gumbo part, we're going to need a roux. That's nothing more than equal amounts of lard, oil, or butter mixed with flour. When mixing the roux on heat, make sure you don't stop stirring. If you do, it will burn very quickly and you'll have to start over again. This is critical. There are several stages you'll go through with your roux. It will start out almost a vanilla color and the more you stir and the hotter it gets, it will continually get darker. Ideally, you want it to get a very dark chocolaty color. 

Now, to help from keeping the roux from burning, you need to add what they call the "Holy Trinity" of gumbos, this being chopped onions, celery and bell peppers. <title>Apalachicola Seafood Gumbo And Me! Posted By: Bob Alexander</title>
<description>We'd been fishing all morning, it was now lunch time and my daughter-in-law and I were hungry. Pulling the trolling motor aboard, we headed to the nearest marina just across St. George Island from where we'd caught a couple of redfish and several trout. After crossing the bay, we eased up to the dock of a shore side marina in Apalachicola, Florida. Our little 16 foot fishing boat looked out of place near 4 large shrimp boats, as we tied it off next to a solitary gas pump. 

After making arrangements with the attendant to top off the tank, we walked up the boat launching pad to a large seafood restaurant. I'm a seafood nut and I love seafood gumbo. In my continuing search for the perfect seafood gumbo, I order the dish at every seafood restaurant I stumble across, and if the full parking lot of this restaurant was any indication, this place served up some good food.

<title>A Fine Kettle Of Fish! Posted By: Bob Alexander</title>
<description>Every year I take up my soup spoon, adjust my bib and continue my search for the best tasting seafood gumbo I can find. It's not an easy job, but I'm up to the task again this year. You can find it just about anywhere you can smell the salt in the air. My choice is the gulf coast from Alabama all the way to Texas.

I've tasted gumbo made with shrimp, (head on or head off) chicken, sausage, fish, scallops, clams, oysters and crab meat. Heads on shrimp give the gumbo a stronger and more flavorful taste. Added to these ingredients are vegetable such as onions, bell pepper, okra, parsley, celery, garlic and tomatoes. 

In addition to all this, there are spices such as bay leaves, garlic, thyme, salt, ground black pepper, cayenne pepper, file' powder, Creole seasoning, chicken bouillon, Worcestershire Sauce, Old Bay Seasoning, Cavender's Greek Seasoning, Crab Boil and ketchup. Some chefs leave out the chicken and pork.

From what I've seen and sampled along the coast, I've discovered that there is no such thing as a standard gumbo recipe.
