         <title>Do's and Don'ts for Your Vacation in the South of France.</title>

         <description>With almost 40 million visitors a year, the South of France remains one of the most sought after vacation destinations in the world. However, some basic knowledge of the area before you go can significantly increase your enjoyment of your visit to the region. Our company, Luxury Riviera Travel, specializes in top-of-the-line vacation packages to the region and we've developed a list of "do's and don'ts" based on our own experience.

1. Do choose your trip dates carefully: Very few vacation destinations are as effected by seasonal variance as the South of France. If at all possible, avoid traveling there during the months of July and August when millions of Europeans flock to the area from the four corners of the continent. Everything becomes more expensive, more crowded, more noisy and more chaotic during those two months. If you must travel during the summer months, it's a good idea to book your accommodations well in advance as the best rooms in the best hotels will generally be taken by the middle of May.

         <title>The Cuisine of Provence â The Hidden Richness</title>

         <description>For years Provencal cooking has been relegated to a poor substitute for the rich cuisine of Burgundy and northern France. “Of course”, gastronomes would say, in condescending tones, “it’s very healthy but how much bouillabaisse can you eat?”
Anyone who still believes Provencal cooking is reduced to fish stew and olives has never tasted Chef Jean-Andre Charial’s version of stuffed zucchini blossoms garnished with fried zucchini flowers, or Jany Gleisse’s fabulous dessert of home made ice cream under a cupola of lavender honey with a fresh lavender sauce. Then there’s Gerard Passedat’s “Petit Nice”, the only restaurant in all of France to get the sought after third Michelin star in 2008. 
But you don’t have to visit a Michelin star restaurant to appreciate the variety and the flavors of Provencal cuisine. You can find not only regional but local dishes such as the petits farcis of Nice with their ground meat and/or vegetable stuffing or the lou fassum of Saint Paul-de-Vence that’s a version of cabbage stuffed with sausage meat, chard, onions and rice.
