Baked Chicken in Tomato Basil Sauce

This dish looks like a million bucks, but it certainly won't cost a great deal to whip this one together. Baked chicken is not only healthy and filling, but the tomato and basil sauce will give it just the right kick to make you forget all about the condition of your wallet.

Ingredients:
8 large chicken thighs
12 oz can basil and parmesan tomato sauce
1 small box of button mushrooms
4 tbsp of freshly chopped basil
1 1/2 cups chicken stock
1 lb small new potatoes
3 tbsp olive oil

One of the most popular and well known signatures of Jamaican cooking has got to be the jerk rub. Here is a very good and relatively simple jerk seasoning recipe.

Jerk Seasoning

Ingredients:
4 scotch bonnet peppers
4 (1 inch thick) pieces of ginger
4 tsp Jamaican allspice
6 bay leaves
2 tsp freshly ground nutmeg
2 tsp cinnamon
2 tsp whole coriander
2 tsp whole black peppercorns
2 lime
2 teaspoon salt
10 cloves garlic

Directions:
Blend all the ingredients in a food processor until it forms a nice even paste. Keep frozen until ready to use. This paste is your rub and it is incredible on chicken or pork. Add to either before grilling or allow to marinade overnight for that "through and through" flavor. Jagerschitzel

One of the hallmarks of German cooking and a staple of good old Deutschland, jagerschnitzel is filling and definitely promises to warm a body up!

Ingredients:
4 pork chops (boneless)
1 egg
flour
bread crumbs
2 tbsp oil
1 tbsp butter
1/2 lb sliced portabella
1/2 lb shitake
1/4 cup dry white wine
1 cup cream or half and half
1 pinch paprika
1 pinch nutmeg
1 tsp minced parsley
4 tbsp fresh chives
1 tsp beef bouillon
salt and pepper to taste

Directions:
Pound each pork chop until thin. Dip first in flour, then egg, then breadcrumbs. Put into freezer for 15 minutes. Heat oil and butter in frying pan. Ingredients:
1/4 tsp saffron strands
4 tbsp boiling water
8 tbsp almonds (blanched)
4 tbsp pistachios (blanched)
2 tbsp ghee (or butter can be used)
1 1/2 cups cream
1 cup milk
1 tsp ground cardamom
1 tsp salt (or to taste)
1/2 tsp white pepper

Directions:
Dissolve the saffron in boiling water. Grind the pistachios and almonds (a blender works best!) until they become a fine powder or paste. Melt the butter in a pan and fry the ground nuts. Southern Pecan Fried Catfish

This one will leave some people scratching their heads as they ask "What is that flavor?" You'll know, and it's up to you as to whether or not to tell them!

Ingredients:
Catfish fillets (skinless and boneless)
Cooking oil for frying
1/3 cup yellow cornmeal
1/4 cup pecans
1 tsp salt
1/2 tsp pepper

Directions:
Combine cornmeal, salt, and pepper into a flat container, such as a pie pan or shallow bowl. Grind pecans in a food processor until nuts are finely ground. Add to the cornmeal mixture. Combine 2 cups of cold water with 1 TBS of salt in a large bowl. Dip catfish in the water salt mixture and shake off access water. In fact, many health professional recommend eating fish twice a week. Finding a tasty fish recipe can sometimes be a challenge, which is why I have included four of my favorite fish recipes below. Poached Citrus Salmon

Ingredients:
2 1/2 lbs skinless salmon fillet
1 qt chicken stock
1 qt orange juice
2 cups white wine
1 small yellow onion (chopped)
2 tbsp minced garlic
2 cups chopped lemon grass
1 tsp salt
1 tsp white pepper

Directions:
Cut the salmon into equal portions. In a large sauce pan, pour in the chicken stock, white wine, orange juice, onion, lemon grass, and garlic. Mix the ingredients together, then add in the salt and white pepper. Mississippi Mud Pie

Ingredients:
1 cup flour
1/4 lb butter (melted)
1/4 cup brown sugar
1 cup finely chopped walnuts
1 tbsp grated coconut
1 (8 oz.) pkg cream cheese
1 cup sugar
1 (9 oz) container whipped cream
1 (6 oz) pkg chocolate pudding

Directions:
In a large bowl, mix together the flour, butter, brown sugar, walnuts, and coconut. When it is well mixed, press it into a 9-inch baking pan. Bake for 15 minutes at 350 degrees F. Remove the crust from the oven and set aside. Next, mix together the cream cheese and sugar.          <title>Four Tasty Salmon Recipes</title>

         <description>Eating two portions of salmon each week is a great way to get a healthy dose of omega-3 fish oils. This is a fatty acid that encourages brain growth and reduces your chances of heart disease. On its own, salmon has a tendency to be quite bland; however we are including four tasty salmon recipes that will ensure that your salmon is bursting with flavor!

Soy and Honey Salmon

Ingredients:
1lb center-cut salmon fillet, skinless (chopped into 4 equal portions)
1 scallion (finely chopped)
2 tbsp soy sauce
1 tbsp rice vinegar
1 tbsp honey
1tsp fresh ginger (finely chopped)
1 tsp toasted sesame seeds (optional)

Directions:

Mix together the scallion, vinegar, ginger, honey, and soy sauce in a bowl. Place the salmon in a large Ziploc plastic bag and add three tablespoons of the sauce mixture and place it n the refrigerator to marinate. Line a baking pan with aluminum foil and spray with a bit of cooking spray. After 15 minutes in the fridge, move the salmon to the baking pan. Broil the salmon for about six to ten minutes. Drizzle the remaining soy sauce mixture onto the fish. While it is hard to narrow them down, I have included in this article three of my favorite American recipes. I hope you enjoy them!

Oven-Fried Chicken

Ingredients:
1 cup low-fat buttermilk
4 (8-ounce) chicken breast halves (with bones)
1/3 cup all-purpose flour
1/3 cup cracker meal
1/2 tsp salt
1/2 tsp freshly ground black pepper
2 tbsp butter

Directions:
In a shallow bowl, combine the buttermilk and chicken. Be sure to turn the chicken to fully coat it with the buttermilk. In another shallow dish, mix together the cracker meal and flour. Take the chicken from the buttermilk and place it onto a sterile surface. Cornish Pasty

Ingredients:
Short crust pastry (make your own: 1/2 lb flour and 1/2 cup of lard or Crisco)
Potatoes (peeled and diced into small cubes)
Stewing steak (diced)

Pinch of pepper

Directions:
Roll out the pastry on a floured surface and cut it to roughly the same size of a dinner plate. Place the pastry circle onto a piece of aluminum foil and place the diced steak, potatoes, and onions in the center of the pasty.          <title>Three Traditional Welsh Recipes</title>

         <description>Welsh cuisine is, unfortunately, often overlooked in cookbooks and online recipe collections. Many Welsh dishes are quite simple in both ingredients and flavor, but should not be forgotten! On a cold day, a hardy Welsh soup or tasty cake can be just the ticket to perking up both one's attitude and energy. In this article I am including three of my favorite traditional Welsh recipes and I hope that your family enjoys them as much as mine does!

Welsh Cakes

Ingredients:
1 cup all-purpose flour
1/2 tsp baking powder
6 tbsp sugar
1/4 tsp all-spice
Pinch of salt
1 egg
4 tbsp lard
4 tbsp butter or margarine
4 tbsp currants (can substitute raisins)
Bit of milk

Directions:
Cut the lard into the flour, then massage it together until the lard is evenly distributed throughout the flour. Add in the baking powder, sugar, salt, and all-spice. When the mixture is well blended, add in the egg. Mix well, then add enough milk to turn the mixture into a stiff paste. Roll out the mixture and cut into round (I find an everyday drinking glass works well).          <title>Three Traditional Irish Recipes</title>

         <description>Irish cooking is quite notable for being hardy as well as consisting of cheap, everyday ingredients. The recipes I have included below are a few of my favorites and are quite easy to make. If you are looking for a filling and nutritious family dish, try these recipes and give your family a peek at traditional Irish fare!

Dublin Coddle

Ingredients:
1lb sausages
8 ounces bacon
1 cup water
6 medium potatoes
2 medium onions
salt and pepper

Directions:
Cut the bacon into squares about 1-inch in size. In a saucepan, bring the water to boil and add the sausages and bacon. Cover and allow them to simmer for about 5 minutes. Remove the meat from the saucepan, but keep the water. Cut the sausages into quarters. Peel the potatoes and slice thickly. Skin and slice the onions. In a saucepan, assemble a layer of potatoes, followed by a layer of onions, half of the sausages and bacon, and then repeat the layering. Finish off with a layer of potatoes. Pour the retained water (from the sausages and bacon) over the layering and season lightly. The recipes I have included in this article are all savory, however the Scottish also have a reputation for producing terrific biscuits (cookies) and cakes. I hope you will give these recipes a try and that you enjoy the tastes of Scotland as much as I!

Baked Cod and Egg

Ingredients:
4 cod fillets
1/2 stick of butter
1/2 cup of flour
3 cups of milk
3 hard boiled eggs (peeled and finely chopped)
1 tbsp butter
Butter (to coat baking dish)
Pinch of nutmeg
Salt and pepper to taste

Directions:
Use butter to grease the inside of a baking dish. Arrange the cod fillets in the bottom of the dish. Melt 1/2 a stick of butter in a saucepan over low heat, then slowly add in the flour while stirring. Gradually pour in the milk while you continue to whisk the mixture. When it turns creamy, heat for an additional 3 minutes before adding in the eggs, another tablespoon of butter, nutmeg, salt, and pepper.          <title>Three Traditional Australian Recipes</title>

         <description>For a long time, Australian food had a great resemblance to British food, largely due to the fact that most Australian settlers were of British origin. Yet over time, Australian cuisine has taken on its own unique fusion of Mediterranean, British, and Asian flavors. This article features three of my favorite Australian recipes that I'm sure you will enjoy!

Sausage Rolls

Ingredients:
6 slices of bread
1/2 cup hot water
4lbs ground sausage meat
1 onion (finely chopped)
1/2 tsp mixed herbs
24 ounce package of ready puff pastry (thawed)
1 egg (beaten)
Desired seasonings to taste

Directions:
Take the crusts off of the bread and soak the bread in hot water for about 5 minutes. Remove the excess water from the bread. In a large bowl, mix together the sausage meat, bread, onion, desired seasonings, and mixed herbs. Blend well, then place the mixture into an icing piping bag (or a freezer bag with a corner snipped off). Roll out the pastry sheets and cut them in half. Pipe the filling along one edge of each sheet of pastry. In this article I am including three of my favorite authentic Spanish recipes that are likely to be found in many Spanish homes!

Lamb Casserole

Ingredients:
2 lbs lamb chops (cut into pieces)
6 1/2 tbsp olive oil
6 potatoes (peeled and sliced)
3 large tomatoes (sliced)
1 onion (chopped)
1tbsp chopped parsley
4 garlic cloves (whole and unpeeled)
2 bay leaves
1 tsp paprika
1 1/4 cups white wine
1 green pepper (seeded and cut into thin strips)
Salt and pepper to taste

Directions:
Pour the oil into a roasting pan. Create a layer of potatoes in the bottom of the pan, followed by a layer of onions and a layer of tomatoes. This article features three of my favorite authentic Italian recipes. I hope you enjoy them!

Sicilian Succo

Ingredients:
4 cloves garlic (chopped)
3 (29-oz) cans tomato sauce
4 (6-oz) cans tomato paste
1 tbsp chopped parsley (fresh) + additional 1 tbsp
1 tbsp chopped fresh basil (fresh)
2 lbs ground beef
1 lb ground pork
1 cup dry bread crumbs
1 cup grated Parmesan cheese
1 tsp garlic powder

Directions:
In a large pot, mix the chopped garlic, tomato sauce and paste, 1 tbsp parsley, and basil. Bring this sauce to a boil, then turn the heat down to low to simmer the sauce. In a bowl, mix together the pork, beef, bread crumbs, parmesan cheese, 1 tbsp parsley, and garlic powder. Meat and Potatoes

Ingredients:
4 potatoes (peeled and chopped into 1-inch cubes)
1 (16-oz) package kielbasa sausage (cut into 1-inch pieces)
1 onion (chopped)
2 green bell peppers (chopped into 1-inch pieces)
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
1/4 cup vegetable oil

Directions:
Warm the oil in a skillet over medium-high heat. Throw in the potatoes and onions and allow them to cook for about 15 minutes. Stir occasionally. Reduce to a medium heat and add in the onion powder, garlic powder, salt, pepper, and bell pepper pieces. Stir well and cover the skillet. Allow the mixture to cook for 5 minutes before adding in the kielbasa. Kielbasa and Sauerkraut

Ingredients:
6 apples (peeled, cored, and chopped)
2 lbs kielbasa sausage (sliced)
1/4 cup brown sugar
1 (32 oz) package sauerkraut

Directions:
In a large skillet, heat the apples and sauerkraut over a medium heat. Let this mixture simmer for about 10 minutes or until the apples have turned soft. Add in the brown sugar and sliced kielbasa and mix well. This article has three great traditional Portuguese recipes that are easy to make and extremely tasty!

Sweet Bread

Ingredients:
1/2 cup lukewarm milk
1 egg
1 tbsp butter
2 1/4 tbsp sugar
1/3 tsp salt
1 1/2 cups bread flour
1 tsp yeast

Pour the yeast into the milk and let it dissolve for a few minutes. In a large bowl, mix together the flour, salt, and sugar. Next, add the milk/yeast mixture, butter, and egg. Mix well. Knead the dough on a floured surface. Once the dough is smooth, place a wet towel over it and allow it to rise for at least an hour. You can place the dough in a greased bread pan, or shape it into a round loaf and bake it on a lightly greased baking sheet.          <description>Traditional Dutch food is rich in diversity. Savory fish and stew dishes, sweet treats and sauces, and hardy breads are just a few of the great foods that the Dutch culture has to offer. In this article, I am going to include some of my favourite traditional Dutch recipes. I hope you give them a try and enjoy them as much as I do!

Flemish Stew

Ingredients:
1 large onion
1.75 oz margarine
2 lbs cubed beef and pork
1 bay leaf
Thyme, salt, and pepper to taste
3/4 bottle of dark beer
1 beef bouillon cube
2 slices of whole wheat bread
4 oz whipping cream
Mustard

Directions:
Heat the margarine in a large pan over medium heat. Roughly chop the onion and add it to the skillet. Saut&#233; the onion until soft, then add the meat. Be sure to brown it thoroughly. Crush the bay leaf and add it to the pan, along with the thyme, salt, pepper, bouillon cube, and beer. Thickly spread the mustard onto one side of each piece of bread, then put them face-down on top of the stew. Cover the pan and reduce to a low heat. Bacon and Broccoli Salad

Ingredients:
2 lbs bacon, cooked and chopped
1 large head fresh broccoli, chopped
3/4 cup of chopped celery
1/4 cup of diced red onion
1 1/2 cups of seedless grapes, halved
1/4 cup of white sugar
2 tbsp distilled white vinegar
1 cup of mayonnaise

Directions:
In a small bowl, mix together the mayonnaise, vinegar, and sugar, then set aside. In a large bowl, combine the bacon, broccoli, red onion, celery, and grape halves. Add the mayonnaise mixture to the broccoli mixture and toss well. Banana Pudding

Ingredients:
2 cups of cold milk
1 package of banana flavored pudding mix
1 (8-oz) container of frozen whipped cream (thawed)
30 vanilla wafer cookies
3 bananas (sliced)

Directions:
Pour the milk and banana pudding mix into a large bowl. Beat for about 2 minutes, or until it takes on a thick consistency. Gently fold in 1 1/2 cups of whipped cream. Place ten vanilla wafer cookies in the bottom of a serving bowl or dish. Top with 1/3 of the banana slices and 1/3 of the pudding mixture. Repeat the layering sequence, ending with the pudding layer on the top. To answer your question, I am including a few of my favourite high-yield meal recipes in this article. I hope one of them works well for you!

Sloppy Joes
100 servings

Ingredients:
hamburger buns
20 lbs lean ground beef
3 cups chopped onions
1/4 cup Worcestershire sauce
1 pound brown sugar
1 cup prepared mustard
2 tbsp chili powder
1 gallon ketchup
salt and pepper to taste

Directions:
Brown the beef in a skillet over medium heat. Drain the excess fat using a colander. Place the meat back into the skillet, then add onions, Worcestershire, brown sugar, mustard, chilli powder, ketchup, and salt and pepper. Cover and simmer on a low heat for about an hour, stirring occasionally. Refried Bean Dip

Ingredients:
6 (8-oz) cans refried beans
3 cups shredded cheddar cheese
1/2 tsp salt
1/2 tsp pepper
8-oz taco sauce
3/4 cup scallions or green onions (chopped)
2 (12-oz) packages blue tortilla chips

Directions:
Mix together the refried beans, taco sauce, salt, and pepper in a bowl. Pour 1/3 of the bean mixture into the slow cooker, then top with a cup of cheese. Repeat this layering twice more, finishing with cheese. Add scallions on top, then cover. Set to a low heat setting and cook for about four hours.
