         <title>Fantasy Hockey</title>

         <description>Playing Fantasy Hockey is not for me. But fantasizing about how I would change things if I ran the NHL is.

Broadcasting:
First of all, there would be a hockey game on television every night. And I don’t mean the NHL package pay station. I mean regular free television. Everyone deserves to be able to watch hockey!

I would yank those stupid NHL commercials during which they show a close-up of only one sweaty non-smiling hockey player against a black background while running some barely audible fuzzy game audio. Why? We all know that the player did NOT just get off the ice; some make-up person misted him with water. So what’s the point? Show player highlights. I’d rather see that than some player I don’t recognize covered in fake sweat looking annoyed.

GoDaddy.com commercials would have to go both ways. Why? Hockey is becoming increasingly popular amongst women. Good for you Danica Patrick, but I’d rather see Alex Ovechkin and Henrik Lundqvist ripping their shirts open.

I would bring back Derek Sanderson. Why?          <title>Lollipop Lollipop Please Make That Commercial STOP!</title>

         <description>There are a lot of annoying commercials out there, and a lot filled with technical mistakes. (A macaw flying over a tiger in a jungle: excuse me, they don’t even live on the same continent...but whatever.)

This year’s Most Annoying Commercial Award (well, so far this year) goes to the Dell commercial where the guys are singing “Lollipop.” For the longest time, I didn’t even realize the commercial was for Dell because of how much the commercial annoyed me. (Yes, I am violating good writing standards by repeatedly using the word “annoyed.” But seriously, I’m annoyed.)

The commercial opens in the dark. When the lights come up, you can see a handsome man wearing overalls standing at a counter. The next second, another man pops up from beneath that counter, next to the first man...and then BUTTONS HIS OVERALLS. Excuse me, but what exactly was going on there??? And then they start singing about lollipops, also known as suckers. Hello??? Dell...what exactly were you thinking when you approved THAT?          <title>Sinbad's Seafood Cafe</title>

         <description>We were driving back from the 2010 Olympics in Vancouver when we discovered the town of Oliver, British Columbia. Billed as the “Wine Capital of Canada,” we were surprised to find that the town wasn’t yuppie at all – it was a quaint frontier-looking town. We decided to stop here for lunch.

Here, at the northernmost point of Canada’s only desert, we found a seafood restaurant. It seemed like the stupidest possible choice, so we made it. “Sinbad’s Seafood” it was.

We entered an exceptionally clean and bright storefront. We were greeted by a friendly waitress. We each ordered a cup of the seafood chowder and split a two-piece order of fish & chips.

The menu touts the chowder as “Rich New England Style.” I do beg to differ with that, having grown up in New England and clogging my arteries for decades with thick cream-based chowders. This chowder had more of a broth-base, and was loaded with huge chunks of salmon, cod and potato. It was, in fact, delicious! The chowder was hearty and filling despite the fact that they were merely cups. Nearly two years ago I visited Harper’s Ferry, West Virginia. I walked to the point, where the Potomac and Shenandoah Rivers meet and conjoin. I was advised that from there on to the Chesapeake Bay, the Shenandoah loses its identity to be consumed by the Potomac. I studied the dark, murky, foreboding river, with bluffs plummeting down into it. Images of a primeval monster lurking just below the surface, like at Loch Ness, came into my mind. Then I walked over to the Shenandoah, wide but shallow and clear, with welcoming stepping stones which lead you out nearly to its middle. Lovely tree-canopied picnic areas lined its shore. I pictured Huck Finn with Tom Sawyer skipping stones and chewing on sprigs of straw. What gave the deep, dark scary river the right to supersede the friendly, happy frolicky river? That didn’t seem fair to me.

         <description>Everyone talks about conserving water, and the new “in” thing is WaterSense faucets and toilets. But those WaterSense toilets still use up to 1.28 gallons per flush – EVERY flush. So, thanks to the suggestion of a friend, it made sense to me to look into dual flush toilets.

New WaterSense guidelines (from the EPA Web Site) are as follows: “The effective flush volume has been established as 1.28 gallons, which is a 20 percent reduction from the 1.6 gallons per flush standard that became mandatory pursuant to the 1992 EPAct.” The EPA claims that replacing an older toilet with a new, efficient WaterSense model can save a homeowner 11 gallons per toilet per day, which translates to nearly 4000 gallons per year. With a dual-flush toilet, the operator is using close to 40% less water with nearly every flush (in partial flush mode). 

For your most common usage, urination, the flush water usage is only .8 gallons (partial flush). I was in the grocery store on the hunt for a Gluten-Free nosh. I was out of my usual stash of snacks, and wanted something satisfying. Trying to stay gluten-free makes that next to impossible, I’m sure I don’t have to tell you that. The words ‘satisfying’ and ‘gluten-free’ are seldom used to describe the same item.

Curiously, Franz Macaroon Cookies jumped out at me. I checked the package, and the ingredients: Dessicated Coconut, Sugar, Water, High Fructose Corn Syrup, Corn Syrup, Potato Starch, Dextrose, Egg Whites, Artificial Flavor, Soy Lecithin (Soybean), Nonfat Milk. Those ingredients certainly didn’t seem dangerous to me, so I decided to purchase the package and check the Franz web site to see if I could get further information about the gluten content.

What would you say if I told you that affordable, frozen, gluten-free crispy battered fish entrees are available nationwide in your grocer’s freezer case? Just last night in the grocery store, I, for one, almost fell over when my gluten-mongering husband-type unit blurted “Look Honey, gluten-free!” and held up a box of Oven Ready Gluten-Free Cod by Starfish. There were also boxes of Haddock and Halibut available. The cod was priced under $5.00 for a 10 ounce box, so we decided to try that.

Now, you need to understand that in our current apartment, we have an extremely old gas stove, so the results may differ with a newer and/or electric one. 

We raced home and popped them in the oven. 14 minutes later, out they came. On the box it states there are 3 servings – we felt it was more like 2 – which is what we were expecting anyway, so that is not a criticism by any means. One side was a golden brown, the other side paler, again, I believe, due to the old gas stove.

Ever have a shock that just messes you up? That happened to me last Wednesday while I was shopping at Wal-Mart. I was in the baking mix aisle looking for the Jiffy Cornbread Mix for my gluten-mongering spouse when my sight unintentionally fell on something completely unexpected: Betty Crocker Gluten-Free Brownies.

Say what? Damn straight. You heard me right. I did a double-take. I stood frozen in the aisle behind my cart. No frikkin way…really? Gluten-free brownies by…Betty Crocker? I had to have read it wrong. So I touched the box to make sure it was real. It was, indeed. $3.79 was the price. I don’t tend to bake gluten-free brownies, but I had to try this out, so I gingerly placed it in the cart.

It was time to go to produce, but I still couldn’t move. What exactly did this mean? As mainstream as Betty Crocker, and as universal as Wal-Mart: were Celiacs finally getting the service we have been asking for? What constitutes a favorite food place? Quality of food, knowledge-level and courteousness of the staff, cleanliness and price should all be considerations. But a favorite food place, just as any favorite anything, should give a person a feeling of comfort and pleasure. Both restaurants provide those. However, White Box also provides gluten-free meals and desserts. 

Only a person with food allergies can fully appreciate feeling “safe” in an eatery. White Box is one of those safe places; everyone on staff knows about gluten. You won’t find a couple of uninformed, not to mention uncaring, teeny-boppers behind the counter huffing at you when you ask for gluten-free. The staff at White Box is always happy to answer any questions about their creations.

Take feeling safe and add to it amazingly delicious desserts, many of which non-allergic people did not realize were gluten-free, and you’ve got a winning combination. Cream pies, sugar cookies, brownies, pineapple coconut cake, cheesecakes, chocolate pecan cake, hazelnut cake, cream puffs…and the list goes on.          <description>	“Almost heaven, West Virginia,” John Denver did say. And that’s true, I have found some wonderful gluten-free food at the Press Room restaurant in Shepherdstown, WV. But I found gluten-free heaven itself in Tacoma, Washington – at Woody’s on the Water.

	Upon our arrival in Tacoma, I searched online for a restaurant nearby where my gluten mongering spousal-type unit, David, could get fish and chips, and I stood a fraction of a chance to find something free of wheat, soy, and the fourteen other foods that I can’t tolerate. I didn’t go into it feeling very hopeful. Most of the restaurants I found were extremely pricey, and the menu selections were certainly not geared to my dietary needs. Then I found the Woody’s on the Water website – and saw, right in the left-hand side navigation bar that they had a gluten-free menu. “This is the place!” I told David. Finally, I was looking forward to eating out somewhere – but of course, I had a tinge of skepticism. 

	Off we went. We followed the signs to Woody’s and arrived quite easily at the Thea Foss waterway.          <description>If you have food allergies, you know that little things can make a big difference. Many foods, especially salads, have been ruined for me. So when I found two alternatives to croutons for people with gluten- and/or wheat-intolerance, I got excited.

Since I have always been a fan of croutons, it was time to take the dive and try these.

The first type I invested in was the Olive Oil & Garlic Gluten-Free Croutons by the Gluten-Free Pantry. They do contain eggs, corn and yeast. They do also contain a lot of flavor. I located my first package of these wheat free croutons in the gluten- free section at an NRG Organic Supermarket on the East Coast. They were so good that I went back for more and they were already out. They never got more in. A couple of years later, I gave in and ordered some online. The consistency of this package was different, in fact, they were rock hard.          <description>I’m into salad this week. While writing my last column, “The Crunch Factor,” about gluten-free croutons, I realized that some attention should be given to the difficult task of finding gluten- and allergen-free salad dressings as well. 

I will warn you, most of the all-natural allergen-free dressings are not cheap. But you get what you pay for: high quality ingredients, healthy products, and good flavor. For this installment, I’m going to feature Honey Mustard.

Please keep in mind that not only do I look for gluten-free products, but I also require foods free of soy, sesame, sunflower, tomato and celery (and eleven other foods). There are actually salad dressings out there that fit that bill, and they taste good!

The first is Briannas Honey Dijon Mustard dressing. I had become familiar with their products over the years at a salad bar at an organic food store, as well as at my best friend’s house.          <title>When Life Gives You Lemons Make Gluten-Free Lemon Coconut Bread</title>

         <description>Yesterday I decided it was time to use those lemons I got on sale. I referred to “125 Best Gluten-Free Recipes” by Donna Washburn and Heather Butt. As I have mentioned in other articles, I’m not a baker. I don’t want to be a baker. I in fact loathe the complexity, chaos and clean-up associated with baking. With that said, being wheat and 15 other foods intolerant, I have to bake if I am going to have anything to snack on other than what has become my favorite food: ice.

The Glazed Lemon Coconut Loaf recipe can be found on page 71 in the quick bread section. I have been experimenting with quick bread recipes, and although this is not as nutritionally beneficial as I would like, so far it is my favorite because a) by the light and moist consistency you cannot tell it is gluten-free; b) it didn’t require a pre-made “gluten-free flour mix;” and c) it uses simple ingredients, allowing bakers to add nutritional ingredients without drastically altering the outcome to the negative.          <description>Guacamole is great as a Gluten-Free in-between meal snack or appetizer. If you can get avocadoes on sale, it is inexpensive to make. 

One reason I prefer cooking over baking is you don’t have to measure. Everything is according to taste, not according to science. So, that is why you don’t see exact teaspoons or tablespoons below. If you like stronger onion or garlic flavor, add more. I tend to go a little heavier on the lime and the Worcestershire sauce. I like it less spicy, more robust.

INGREDIENTS
3 Avocadoes
1 clove of fresh garlic
2 small slices of tomato
3 small slices of onion (yellow or sweet)
3 small slices of green or red pepper
Salt to taste
Pepper to taste
Fresh lime juice to taste
Worcestershire sauce to taste – Lea & Perrins IS Gluten-Free

I don’t bother peeling the avocadoes – I cut them in half, pull out the pit, then squeeze the “meat” out of each half. It can be a little messy on the fingers but it’s fast.          <title>Spread the Joy with Salmon Spread!</title>

         <description>Tired of finding salmon spread in the grocery store with about 30,000 ingredients most of which include soy and unpronounceable polysyllabic words? Well, your worries are over.

I got so disgusted with the spreads found in the stores that I decided to try my hand at making my own. It is all natural and a lot easier than I anticipated!

All you need is a piece of salmon, some cream cheese and a small food processor.

I used store-brand soft cream cheese in a tub. The ingredients are: pasteurized milk and cream, cheese culture, salt, stabilizers (carob bean and/or xanthan and/or guar gums). Any time I see xanthan gum in the ingredients it’s a clue to me that even though the product is not marked gluten-free, it probably is. If you are super sensitive, however, I would never suggest you make that assumption.

The salmon was a nice grilled chunk left-over from last night’s dinner. I always try to cook an extra piece for salmon salad the next day. 

My Cuisinart Mini-Prep food processor is the perfect size for this little task.

Instructions:

         <description>There are a few choice things that I truly miss since being diagnosed wheat-intolerant: deep fried foods and Chinese food are at the top of that list. So when I accidentally made this dish that ended up tasting like restaurant Chinese food – well you better believe we make it a couple of times a month. Even my non-allergic spouse thoroughly enjoys this one!

One of the great things about this recipe is that you have a lot of flexibility. If you want to add red peppers, go for it. The same goes for other Asian-type ingredients like: water chestnuts, bean sprouts, baby corn, and the like. Fresh pineapple is a great addition as well.

My kitchen is not a produce stand – I am on a budget. I use ingredients I tend to keep on hand. This recipe is great for leftover chicken. You can use raw if you want. I find the already cooked chicken absorbs the flavor very well and ends up extremely tender. INSTRUCTIONS:
Start the water to boil for the rice – add salt and/or butter or olive oil if desired. Meanwhile, slice up the sausage, chop the onion and cut up the broccoli to the size(s) you desire. 

Once the water is boiling, add the rice and turn it down. Cook to the package directions which are usually from 30 to 50 minutes. With 20 minutes of cooking time left on the rice, warm up a large skillet; add the sausage and onion. Start the water to boil for the pasta – add salt and/or butter or olive oil if desired. Meanwhile, slice up the sausage and cut up the broccoli to the size(s) you desire. Warm up a large skillet; add the sausage.

Once the pasta water is boiling, add the pasta and turn it down. Cook to the package directions which are usually from 16 to 20 minutes. Stir sausage as needed; stir pasta as well. Put broccoli in steamer (or your preferred method of cooking). 

About 5 minutes before the pasta is done, turn up the heat to brown the sausage. This chicken sausage is lean and should not need to be drained. Once the slices are browned to your satisfaction, add the cooked broccoli into the skillet. Stir.

         <title>Quick and Easy Gluten-Free Chili Recipe</title>

         <description>This recipe is a delicate balance of sweet and spicy. If you want spicier flavor, add chili powder, cayenne pepper, cumin and red pepper. This chili is great for freezing in individual serving containers and then heating in the microwave for a nice hot lunch!


INGREDIENTS:
ï‚§	1.5 pounds of 93% lean Ground Beef (sometimes I substitute 50% with ground turkey)
ï‚§	1 medium yellow onion, chopped finely or nearly pureed in the food processor
ï‚§	16 oz Cream of Tomato Soup (please see below for gluten-free)**
ï‚§	28 oz Delmonte Chunky Diced Zesty Chili Style tomatoes or equivalent
ï‚§	1 large can of kidney beans (2.5 pounds)
ï‚§	Chopped fresh parsley as desired
ï‚§	1+ tbsp Worcestershire sauce to taste (Lea & Perrins is gluten-free)

NOTE: There are two ways to prepare this â€“ standard stove top or crock pot. I prefer crock pot because it is maintenance-free. Instructions for both are provided.

STOVE TOP INSTRUCTIONS:
Brown beef in large pot, drain.
