         <description>Although most people think of Cinco de Mayo as a Mexican holiday, it is actually as American as apple pie. The roots of this celebration go back to the occupation of Mexico by the Emperor Maximillian of France in 1861. Cinco de Mayo is actually the day in which the Mexican forces defeated Maximillian's army in Puebla. It was the first such defeat by the French forces in 50 years. And although it took until 1867 for the French to end their occupancy, Cinco de Mayo is still celebrated as the beginning of Mexican independence.

Today, Cinco de Mayo is primarily a celebration of the heritage and culture of Mexican-Americans. But like St. Patrick's Day, it encompasses all people in its fun and pageantry. Interestingly enough, Cinco De Mayo actually enjoys larger popularity in America than it does in Mexico. The possibilities are endless, as anything that's made with flour can be made with whole wheat flour instead.
The Nutritional Benefits

The benefits of consuming whole wheat grains versus processed grains are innumerable. Whole wheat grains are unprocessed while grains that make up white flours only make up 60 percent of the original grain. Why does it matter? Because the 40 percent thatâ€'s taken out of the equation is the healthiest part of the grain. Whole wheat grains are made up of three parts: the endosperm, the bran and the germ. If you didn't, don't be surprised as new research has just indicated that the larger your fruits and vegetables, the less packed they are with antioxidants and nutrients. This is because they have more water, which dilutes the quantity and efficiency of these important food elements. You can use these tiny fruits and vegetables in a number of recipes and ways. One of my favorite things to make with fruit is cobbler. As it doesn't have a bottom crust it's easier than pie and you don't have to frost it so it makes a quick dessert as well.
