You can either serve or eat an omelette or you can serve or eat THE omelette! The difference between a good omelette and an ordinary one is quite staggering considering that we are talking about the same and simple ingredientseggs and some seasoning, maybe a filling of herb, mushrooms or cheese.
But, it still is just a quick dish made out of eggs!
The fun starts in the kitchen when you take your egg from one of the fun ceramic egg trays you may have purchased in a little village in the French Provence. As we learned there, eggs should be kept out of the fridge and at room temperature to remain the best flavour, hence the French potters came up with the perfect ceramic egg trays for 6 or 12 eggs.
After beating a couple of eggs in a nice ceramic bowl, you add a little salt and pepper, some paprika and cayenne pepper, a touch of milk or even soya sauce is optional, and then you add it all to a small round frying pan at high heat just with a little butter or olive oil. Swirl the pan a few times from side to side and let the egg set at the sides of the small pan. Swirl again and then fold the omelette and let the rest of the still liquid egg harden inside the Omlette. Wait a few seconds then serve the perfect Omlette on to a pre-heated ceramic Omlette plate that you, of course, also picked up on your last visit to the Provence.
And Voila the perfect omelette is ready.
Ceramic turn over omelette plates are another typical French invention. It could also be used as a cake stand or for fruit display or many other things but the original idea was to grab the stand, hold it over the frying pan, turn it all over and there it is in the middle of the serving dish or plate. Its so clever.
Of course one can add mushrooms which need a little frying before you add them to the omelette or add some cheese to the omelette inside the pan and let it melt before turning it over or just a concoction of herbs.
Ideally you serve it with a lovely green and tomato salad served in a wonderful ceramic bowl and if an omelette turning plate is not at hand, just pick a nice hand made and decorated ceramic plate also from your last visit to the Provence. Finish the table with a ceramic water (or wine) jug and you feel as if you are catapulted back to your last holiday in the Provence.
