There are any number of ways to approach this question; both charcoal and gas offer distinct advantages and disadvantages in different situations. Here are a few criteria that one might use to judge the relative merits of charcoal and gas grills.

How easy is it to set up, to light, to operate, to clean?

The charcoal grill is a classic, easy to set up. All you have to do is set it upright, fill it with charcoal, and go. A gas grill, on the other hand, requires one to deal with all sorts of hoses, tanks, and miscellaneous accessories. Setting up a gas grill takes way more time and effort compared to a charcoal grill. In ease of lighting, gas might have a slight edge. Propane, being under pressure, will easily light even in less ideal weather. Charcoal can be a bit more difficult to start without completely dousing it lighter fluid and losing an eyebrow or two.

Cleaning, on the other hand, is far easier with a charcoal grill. If a gas line gets clogged from use, it can be very difficult to clean. If a charcoal grill gets clogged, you can simply empty it out and scour the inside of the bowl.

How does the flavor of the barbecue compare? Gas is often praised for its clean flavor, but this is not why we grill. To get an authentic outdoor-cooked smoky flavor on a gas grill, you have to add all kinds of extra wood chips, smoker attachments, etc. With a charcoal grill, all that flavor (and that special hint of lighter fluid) is inseparable from the cooking process. Without a doubt, food tastes better on a charcoal grill. Gas may be an efficient way of cooking meat, and might be good for gourmet cooking on a gas kitchen range, but it misses the point of grilling. By adding extraneous features, hardware that is likely to break or wear out, and a clean flame that sacrifices flavor for convenience, the gas grill stands opposed to everything that makes outdoor cooking great.

In the end is their really a choice. Charcoal grills really are the only grill option.
