Pairing food and wine is a lot like finding the right relationship. You need to find that perfect combination. Like true love, to marriage of food and wine should compliment each other. With this kind of pressure, its easy to see why pairing food and wine can be daunting. To add to the stress, there is an endless list of rules for pairing food and wine.

Rule Number One All is Fair in Pairing Food and Wine
Just like love, there are no set rules when pairing food and wine. There are hints and suggestions but dont fall into the trap of listening to all your friends advice when it comes to pairing food with wine. Its about personal preference. Its about gut instincts. And like love, when pairing food with wine, its always a bonus to get creative.

Rule Number Two Look for Combinations with Chemistry
Lets consider the chemistry of pairing food and wine. Now your tongue can only detect four flavors: sweet, sour, salty and bitter. But, your nose can smell over 200 different aromas. The chemical reaction that occurs between taste and smell can send you into sensory overload. Its like seeing a beautiful woman, then having her pheromones pull you across the room. The combination can be exhilarating either way. As you begin pairing wines with foods, keep in mind that the flavors of the foods can both contradict and compliment wine selections, and both can be good. Salty and sweet is nice, but sometimes sweet and sweet is better!

Rule Number Three Light likes Light Sometimes you want your date to be lighthearted and sometimes youre in the mood for something a little more meaningful. Same rule applies when pairing food with wine. Consider whether a dish is 'heavy" or "light" in nature, the
difference between a meal consisting of steak and potatoes or one that tends toward a chicken and vegetable stir-fry. In general, most people seem to
prefer heartier foods paired with fuller-bodied red wines and lighter fare to be complimented by more delicate white wines. Again rules are made to be broken, so if you want a light chardonnay with your ribeye, you can always
refer back to rule number one: All is fair in pairing food and wine!
