The bigger a city is the more competition there is to be at the head of the field when it comes to people's business. When the city is also a major tourist destination you have not only the city's population to cater to, but a lot of incoming trade from out of state, and even from abroad. As a result the level of competition is still higher. Some restaurants will take the deliberate step of setting themselves in the middle of the road, to maximise the number of people they can bring in and send away with a full belly, and get more in to pay their money and eat. It is a similar thing to the difference between a boutique and a simple clothes store. You may be paying a bit more, but the product, the service and the overall experience are of a commensurate quality so you do not mind.
