Mami- Popular Chinese Noodle Soup For Filipino

Mami, it is a popular Chinese noodle soup recipe for Filipino, Filipino in all walks of life loves this soup recipe so much as you could always see cart selling mami in every street corner. Mami usually cook with beef, chicken and wanton. Popularized by a Chinese peddler and a later a restaurant owner known as Mamon Luk and his famous recipe is known as mami. Basically there are four components for mami,-noodles, meat ingredient, broth, and toppings. Bacolod has its unique method for preparing Mami, it is known as Lapaz Batchoy, the recipe might name differently but basically it has a big similarity with mami.
For cooking Beef mami broth you will need the following ingredient:

2 kg beef spare ribs (or beef shank)
2-2 tbsp sesame oil
kg beef fat
1 teabag sibot
1 tsp Ground peppercorn
2 pcs onion
2 cubes of beef bouillon
Salt to taste
3 liter of water

Procedure for Cooking:
Wash spare ribs and fat thoroughly and bring to boil in pressure cooker along with salt, ground peppercorn in 3 liter of water, simmer for 3 hours. Add beef cube, sesame oil, sibot and simmer for another 5 minute, remove sibot tea bag and set aside soup.

Ingredient for Mami Sauce

1 kg sirloin, cut into cubes
2-3 tbsp garlic, minced
2-3 tbsp Cooking oil
1 onion, peeled and slices
1-2 pcs star anise
Brown sugar, 2-3 tbsp
cup cornstarch dissolves in cup of water
cup Chinese soy sauce
2-3 cups of water
Rock salt

Mami Sauce Direction For Cooking

In a pan with cooking oil, saut garlic, onion and add beef cubes. Add Chinese soy sauce and simmer for 5-10 minute. Add water, bring to boil until meat tenderized. Add star anise and cook for several minute, taste and add salt if needed, salt with vetsin.

How to Prepare Mami Noodle:

In a casserole, bring to boil 1 liter of water. Add 1 tbsp cooking oil and 1 tbsp of salt then include mami noodles and bring to boil for 30 seconds, remove the noodles, drain to remove excess water.

How to Prepare Beef Mami:

Put one scoop of noodles in a deep bowl, add newly boiled broth and top with a scoop of cooked beef sauce. Garnish with spring onion.,Beef mami is usually served with siopao asado or bola bola, it is also eaten with Putong puti (rice cake). It can be also be topped with siomai (Wanton) and the recipe will be known as Beef wanton noodles.
