The same group of researches found that a diet that is low in fat and high in fiber helped dieters lose as much as three times as much weight compared to a low fat and low fiber diet. Researchers speculate that the reason for this difference is because fiber is digested very slowly but it also binds to fat, causing it to be digested rather than stored. Your body works harder to digest high fiber food, which means that you actually burn more calories just trying to digest your dinner!

While all types of fiber are good for you, one type has gained a lot of interest from dieters and scientists alike. Resistant starch is a type of fiber found in potatoes, corn, and rice that actively resists digestion. When resistant starch is fermented in the large intestine it creates beneficial fatty acids including one type that blocks the bodys ability to burn carbohydrates. "This can prevent the liver from using carbs as fuel and, instead, stored body fat and recently consumed fat are burned," explains Janine Higgins, Ph.D., of the University of Colorado. Carbs are the main source of fuel for your body, but the fatty acid produced by resistant starch actually blocks the body from using carbs which forces your body to burn fat instead.
