Heat the oven to 375 degrees, in a container, combine the oil, sugar, vanilla, egg and pumpkin puree and mix collectively until the mixture is light and fluffy. Then put in the additional ingredients, the flour, baking soda, baking powder, pumpkin-pie spice and the salt and mix only until the ingredients are thoroughly combined aim not to over-mix.
