The fact of the matter is that any recipe that you read and that includes a recipe for bandanna bread, if you have one, is simply someones interpretation of how something should be prepared. This means than no, you won't be arrested if you take it upon yourself to do a little experimenting.

Of course everyone knows not to use fresh yellow bananas to make banana bread. However; if you weren't aware of this, its highly important. Now don't get me wrong, because this doesn't mean old rotten and moldy bananas. It means bananas that have brown skins and have become soft.

Never substitute margarine for butter. If you're worried about he cholesterol in butter, the fact is that margarine is actually worse for you. The wise thing to do if you're in search of a more healthy finished product, is to try substituting with something like heart healthy flax seed oil. Even then, do leave about half of the butter in for flavor.

Another thing you can try, is tossing a quarter cup or so of any rich dark brown liquor in like rum or amaretto. Or you can try pouring it over the top after it comes out of the oven and cools. Needless to say, there's plenty of room for experimentation here, so have fun. Just don't go overboard.

Use a long thin wooden shish-kebab skewer or a piece of a whisk broom to stick down into any cake as it's baking if you want to know how close it is to being done. When you pull it out, if it has uncooked batter stuck to it then back into the oven it goes. If it comes out nice and clean then the cake or banana bread is ready to come out and cool.
