If you'd like to enjoy genuine barbeque with old fashioned flavor, consider investing in an open pit BBQ. Cooking in a BBQ pit increases the absorption of heat and smoke into the meat, and the taste is incredible. This method of preparing food outside is perfect for more sizable cuts of meat such as a roast. Subject to the size of your pit, you could even cook up half a cow or a pig.

There are two basic choices in open BBQ pits, modern and traditional. The traditional BBQ pit is essentially a hole in the ground. You then fill it up with charcoal or wood and set it on fire. You can cook your food by inserting it on a rotisserie set up over top of the fire. Or you can set up a grill over top of the fire. You can even wrap up your food in aluminum foil and place it in the hot coals after the fire has died out.

The modern open pit BBQ is constructed above the ground. Brick, concrete and stone are the most typical materials used for constructing such a structure. The pit includes a firebox where the wood or charcoal can smolder. You'll want to attach a grill to the pit. Just ensure that it's far enough away from the flame so your meat won't become burnt.

With an open pit BBQ there are two approaches to cooking your food. You can use either indirect or direct heat. Direct heat cooking means that your food cooks directly over the flame of the coals or wood. In order to prevent flare ups from burning the food, many people pile the coals at one end of the pit and place the food at the other. This is a fast cooking method and is ideal for smaller cuts of meat and hamburgers.

Indirect cooking is also known as pit cooking. Indirect heat will cook your food at a low temperature over a prolonged period of time. First you build a hot fire and let it burn for some time. The goal is to accumulate a lot of heat in the walls of the pit.

After the fire burns out or you douse it, you set the meat on a grill which is positioned within the confines of the pit. You then cover up the pit. The heat that has been absorbed into the sides of the pit will do the job of cooking the meat. With this kind of cooking, it takes quite a lot of time before your meal is done. But it's perfect for less tender cuts of meat. Many people are convinced that this is the best cooking technique for enjoying authentic BBQ flavor.
