India offers different flavor of vegetarian and non- vegetarian in the world's cuisine. All regional cuisines of India have in common is its use of spices. Indian masala is very famous in South Asian cousins. It is available in a combination of dried (and usually dry roasted) spices, or a paste (such as vindaloo masala) in the market. It is made from a mixture of spices and other ingredients often garlic, ginger, onions and chilli paste. Masalas are used broadly in Indian cooking to add spice and flavor.

Garam is a Hindi word that means hot. Garam Masala is an essential ingredient in the cooking of most parts of India. Generally, it is added to the dish very shortly before serving to enhance flavor. Garam Masala is a mixture of ground spices, black pepper used in Indian curries. It is excellent rub for chicken or meat. It is prepared in ethnic groceries, and specialty stores in the market. There are different methods to make Graram Masala but one of the best methods is toasting and then grinding the ingredients. This can be done by placing the seed ingredients once at a time in a pan over medium high heat, and shaking them until they just begin to smoke and release their distinctive aromas.

The garam masala can be stored in a tightly sealed glass jar for up to 6 months. Any time after that the spices will begin to lose flavor and aroma. I use chicken masala for a rub for roasted or grilled chicken and beef. The aroma and flavor are excellent, and chicken baked or grilled will retain the excellent flavor of the Garam masala.
