We all love smoked brisket, especially in the summer time. It makes for a wonderful choice for our family get-together and our fun with friends. Here is an excellent barbecue recipe that can be suited to your taste but in it's current form is not too spicy so that all the members, even kids, can enjoy a wonderful smoked barbecue event.

A great tasting tender smoked brisket. Perfect on a hot summer day. Here are some items that you will need:

4 tablespoons sweet paprika
2 tablespoons chili powder
2 tablespoons ground cumin
2 tablespoons dark brown sugar
2 tablespoons salt
1 tablespoon dried oregano
1 tablespoon granulated sugar
1 tablespoon ground black pepper
1 tablespoon ground white pepper
1 to 2 teaspoons cayenne pepper
1 brisket

1. Apply the rub generously to all sides of the meat. Cover with plastic wrap in the refrigerator for 4 hours to overnight. 1 hour before cooking, remove the brisket from the refrigerator uncover to bring to room temperature.

2. Place fat side down as the close to the fire as possible and sear for 7-8 minutes. Then flip brisket and place at opposite end of pit away from fire box.

3. Smoke covered for 2-3 hours at approx. 275-300 degrees with fat side up, without touching or opening the pit (This is enough time to impart a good smoked flavor into the meat)

Spread a thinly sliced onion and 1 bottle of beer in a pan under the brisket and cover tightly with tin foil.

4. Place into an oven or on pit at 275-300 degrees in a foil pan and cook for 6-7 hours (depending on size) until fork tender.

5. Remove from pit or oven, loosen foil at one end to release steam and let the brisket rest for 45 minutes.

6. (Optional) After this, you can drain the juices into a bowl and place in freezer for 10 minutes to de-fat. Separate the fat from the juices and discard, then pour up to 1 cup of the remaining juices into a sauce pot with your favorite barbecue sauce, stir, heat through to combine for a great flavored sauce.

7. Separate the top and bottom of brisket- trim excess fat.

8. Slice across grain on the diagonal into long thin slices

Enjoy your barbecue smoked brisket with some corn on the cob, some big fat rolls, and a nice cool salad.
