How To Cook Pancit Palabok

Pancit Palabok is one of the many variation of Pancit ( Noodle Recipe). While different pancit recipe has similarity in many ways, Pansit Palabok differs for having a sauce aside from topping that give unique flavor to the food. Pancit bihon is the most popular among the family of Chinese noodle recipe, it is so popular because for lot of reason, first it is easy to prepare, secondly is the affordability, third is the availability. Being popular of a certain recipe doesnt mean that it might the most delicious and flavorful among the group. For me, while I always prepare bihon I still prefer Palabok noodle recipe when it comes to taste. Compare with typical pancit bihon, Palabok is much expensive and the preparation is much gruesome, I always prefer noodles from well known Supermarket because of the quality which makes palabok more presentable to the eye. If you want to try and impress friend and family, offer them this delicious recipe. Here is my method for preparing Palabok noodle recipe.

Ingredient for Cooking:

1 kg of Palabok noodle
100 gram of fresh shrimp (deshell and devein, wash) Extract shrimp juice from the shell by using mortar and pestle
kg ground pork
2-3 pcs tofu (tokwa), cut into small cube
2-3 tbsp minced garlic
1 whole onion, slice
1 pork cube
4 cup of water
Chicharon baboy (crushed)
Tinapa flake (smoked fish)
1 bundle spring onion, slice
Atsuete oil (annatto)
Fried garlic (Topping)
Hardboiled egg
cup of cornstarch, dissolve cup of water

Procedure for Cooking:

A.)For Topping
Saut garlic, onion, and ground pork and cook for several minute until the color of ground pork start to brown and start to render its own oil. Add shrimp, tokwa, patis, and 1 cup of water. Let it dry, add Tinapa flake and chicharon until the mixture is well done.

B.)For Sauce
In a casserole, saute garlic, onion and add 1 liter of water to boil. Add shrimp juice and pork cube seasoning for flavor, salt to taste and season with a pinch of ground pepper corn. Add atsuete oil to gather prefer color, add cornstarch to achieved desire consistency.

C.) Preparation For Noodle
Dip noodle in clean basin, bring to boil water in casserole, simmer then deep noodle on hot water for 30 seconds, bite noodle to check for the prefer consistency, dip again if needed to achieve desire consistency.

How to Prepare Palabok :

Place one serving of palabok noodle in a platter, pour using a scooper palabok sauce to cover top, top with 3-4 heaping tbsp of cook mixture, garnish with spring onion and hardboiled egg at the top. Best served while it is hot.
