Mango Walnut Chicken

Our next dish utilizes one of my favorite sauces, its zesty mango and green apple. It's kissed with a little habanera so it's got a real zest, it's a sweet heat, it's really really delicious and super easy to make. So what we're going to do is I'm just going to take some of our cooked organic brown rice, I'm going to pop it really simply on a plate. I just made a little mold there so it sits up higher. We're going to take our chicken breast and just sit it up on top of the plate right there, then we're going to take some vegetables that we have, this time I'm going to use our California blend.

And you know our foods are so delicious and so simple, so wholesome, so convenient, but hey look you eat with your eyes so I like to make them pretty. Look how these are just our Smart Cooking foods, I'm just kind of sitting up the vegetables. You don't need to do this if you're hungry, you can just go for it. But you know what, at the end of the day I like it when it looks pretty. So check out that plate right there, check out the color on that plate right there.
OK, that's just simply our Smart California vegetable blend, our breaded chicken breast, and our organic brown rice. Now what are we going to do next? I'm going to take our mango and green apple sweet heat sauce and I'm just going to drizzle it on there. You can spoon it on there if you like but I got to tell you, this sauce is so delicious, look how phenomenal that looks. And it is absolutely outstanding.

Good, now one of the things I love is to take a dish and just give it a little kick to the next level, a little pizzazz, a little vitality we're going to add to it. So we're going to take this exact same dish, remember what it is? Zesty mango and green apple. You can add some diced Granny Smith apples and it will really give it a pop. But what I'm going to add today is I'm going to add some fresh pineapple slices that's really going to key it up to the next level. Check that out, we're just giving it a little bit more of a Caribbean flare with that pineapple. We're going to add a little bit more sauce and there you have it, same dish.

Now so far we've taken our zesty mango and green apple sauce, you can add some diced fresh mangoes to really really make it pop. You know what you can add? A little bit of scallion, I like scallions, just add a little scallion to the top for color and you know what? I don’t know about you but I'm nuts about nuts. Nuts are packed with powerful nutrients and really really good fats so I'm just going to take some nuts and crunch some fresh nuts and I'm going to call this zesty mango walnut chicken.
