Hosting dinner for an important event means serving appetizers. There are so many different options available that it's hard to decide which one to choose. You can go ethnic or healthy, Asian or European. You can even offer something decadent that tastes devilishly good but can wreak havoc on the health.

Your first consideration should be your budget. Caviar and hotdogs are worlds apart not only in taste but in price. It would be wise to label each dish so that guests with food allergies may be able to enjoy their appetizers without worry.

In choosing your appetizers, you can start by deciding on a theme. Pick a type of ingredient and go from there. You can have seafood, poultry or cheese. For poultry, you can make small kebabs, dumplings or quesadillas. With seafood you can make bacon wrapped scallops, dumplings or shrimp/crab cakes. You can also make all sorts of finger sandwiches.

If you would like to serve meatless appetizers, there's mushroom quiche, asparagus rollups or filo dough with feta cheese and olives as filling. If you're a purist and do not want anything with animal products whatsoever, you can have vegetable dumplings, vegetable spring rolls, and potato puffs. Vegetarian or not, these appetizers taste great!

You can create a lot of different appetizers using puff pastry such as tiny beef Wellingtons, cheese straws and mushroom turnovers. You can also use puff pastry to enclose a wheel of Brie cheese with caramelized onions as topping or wrap tiny hotdogs with it. Then there are also those pastry cups you can fashion and fill with seasoned chicken, sundried tomatoes or any filling you like.

If you want to be a little bit more creative, you can fill up tiny dishes with a scoop of spaghetti with a meatball on top. Or, you can skewer a chicken encrusted with pecans and drizzled it with sweet mustard sauce. You can also prepare sliders which are those tiny burgers topped with all the usual burger fixings.

A party theme is also interesting. You can make different types of appetizers from a particular country or region. A Mexican inspired appetizer set can include empanadas, salsa with chips and mini tacos while an Asian theme can include satay, potstickers and samosas. You may also prefer to make a unique Asian appetizer by wrapping a crispy water chestnut in apple smoked bacon.

The secret in serving great appetizers is careful planning and a lot of inspiration and creativity. You should make them ahead of time and simply reheat before the party. These appetizers are sure to whet your guests' appetite for the even better things you have prepared for the main course.
