I was talking to a friend this morning, waxing on about my home-brewed orange-cinnamon gourmet coffee. She laughed, and said her husband calls this kind of nonsense "pantyhose coffee." Pantyhose coffee!

Okay, I see his point. After all, he's a man's man, a commercial pilot and gentleman horse farmer. No sissy cinnamon in his morning joe, no sir. Coffee should taste like coffee, end of discussion.

According to coffee lore, Abraham Lincoln summed it up nicely when he said "Waiter, if this is tea, please bring me some coffee; if this is coffee, please bring me tea."

Strong Does Not Equal Bitter in Gourmet Coffee

Brewing a good, strong cup of gourmet coffee is a straightforward process. If you start with fresh, high quality beans, you are way ahead of the game. Grind them immediately before brewing if you can, for the best flavor.

Many women still suffer from "grandma syndrome" when it comes to brewing coffee for their men. I know I was brought up believing I needed "one tablespoon of ground coffee for each cup you pour." That may have been fine back in grandma's day, when coffee cups were significantly smaller.

With today's average size cup being 12-16 ounces, you need to up the ante significantly. I go for close to two tablespoons of ground gourmet coffee for every cup.

Bitter? Try These Gourmet Coffee Tips

If your gourmet coffee tastes more bitter than strong, you may be dealing with a problem of over-extraction. This happens when the oils from deep inside the coffee beans are pulled out during brewing. These deep interior oils have a more bitter taste than the more easily extracted outer oils.

To avoid this, keep these tips in mind:
* Use enough coffee for the amount of water. If you don't use enough gourmet beans, you'll over-extract from the beans you have, which means a weak and bitter taste.
* Use water just below the boiling point. Water that is too hot will quickly over-extract your grounds.
* If you use a coffee warming plate, dump the pot after 15 minutes. We've all had late night diner coffee that sat too long. Best to brew smaller pots more often than let a large pot sit and get bitter.

Admittedly, a strong cup of gourmet coffee may take you a little while to get used to. Some people simply prefer a lighter taste, and that's what makes life interesting. If you share your coffee pot with someone who likes their brew dark and strong, try it. You can always add some hot water to your own cup if you need to cut the taste.
