How The Roasted Bell Peppers And Bufala Mozzarella Bites Made My Day

There is a barbecue party in your home. While your barbecue is still being cooked outside with the boys, you discover that many early birds started gathering in your patio. You are a little distracted as you prepare the other kinds of food you wish to prepare because you want to entertain the people who just arrived. You then remembered the perfect appetizer your grandmother boasts of: the Roasted Bell Pepper and the Bufala Mozzarella Bites.

You went looking for the notebook you grandmother gave you and decided to make the dish. You have mastered making it when you were in college. But over the years, it has completely left your mind. Looking through the notes, you wish you remembered all the steps on how to do it by heart. Good thing you were able to find the recipe. Here it goes:

Ingredients:

2 bell peppers, one yellow and one red
1 tub fresh mozzarella, preferably the cherry sized
olive oil
salt and pepper and/or seasoning that you like
3-4 fresh basil leaves

Steps to Follow:

1. Set oven to broil. Line a baking sheet with foil. Put the foil with the peppers on top into the broiler. When the tops of the peppers have turned black, take tongs and rotate peppers. Keep turning peppers until the skin is completely charred. Place peppers in a brown paper lunch sack or in a large zip lock bag. Then close. For about 10 minutes, let it steam. Put peppers to a cutting board and then leave it there first.

2. After peppers have cooled, skins will slip off easily. Remove all skins and then cut peppers in half, removing stem carefully so peppers don't tear. Take out the seeds with care. Slice each pepper half into about 5 or 6 strips. You may now season the pepper strips.

3. Take out the water from the Bufala Mozzarella balls. Place mozzarella in small bowl and drizzle some olive oil on them. Sprinkle some salt and pepper and/or your seasoning and toss.

4. Take each Bufala Mozzarella ball and wrap with a strip of pepper. Secure with a toothpick and place on serving platter. Repeat with remaining peppers and cheese. Slice some fresh basil, if you like, into chiffonade and sprinkle over the appetizers.
