Homemade Chicken Soup

This is a warm and comforting soup that is cheap and nutritious at the same time. At some point or another you must have had or even tasted chicken soup. In fact, many individuals trust chicken soup to assists in remedying illnesses such as the flu. If you follow the direction you can make delicious chicken soup within one hour. The best part of this soup is that you can add various items and make it into a delicacy. If ever a time you need to make it yourself, here's how to do so:

Ingredients:

One-half chicken, approximately 2 1/2 pounds
Two ribs celery, chopped
One pound pumpkin
Two large carrots, chopped
One medium turnip, diced
One small piece thyme
One medium onion, chopped
One medium sweet pepper, chopped
One small hot pepper
Two stalks escallion, crushed
One clove garlic, minced
Two quarts water
One-half pound sliced carrots
Two medium Irish potatoes, diced
One cup pigeon peas
One sachet chicken noodles

Directions:

1.Cut the chicken into chunks and place in a large pot with water and pigeon peas to boil.
2.When the water starts bubbling vigorously, add two chopped celery stalks and the two chopped carrots.
3.Cover and boil until the chicken and peas are half cooked.
4.Next, add the pumpkin, Irish potatoes and turnips to the pot.
5.When the chicken is fully cooked add your packet of chicken noodle soup along with thyme, escallion, garlic, sweet pepper and hot pepper.
6.Simmer for about ten minutes and your soup is ready to serve.

Tips:

There is no need to use salt because the noodles will supply that flavour to the soup.

You may include dumplings if you prefer.

Do not allow the hot pepper to burst in the soup.

There are many other chicken soup recipes available, but this is the one that has worked best for me. My family has loved this recipe for several generations. This soup is a perennial favorite in our home and I hope it will become one in yours also.
