With the holidays fast approaching us there is no better time to be thinking about gluten free baking. For those of us who live each day with our food allergies, baking can be something of a mixed bag to the uninitiated.

My first foray into gluten free baking was a complete disaster. I managed to find a relatively straight forward sounding recipe for gluten free bread on the internet. Due to a broken printer I scribbled down what I thought were all the important steps, ingredients and measurements that I needed to know and headed off the health food store to stock up.

Of course when I arrived at the health food store I found that they were all out of one of the vital ingredients. I think it was the xanthan gum if I remember correctly. But I thought that it can't be all that important, so I'll carry on regardless.

So once I'd returned home and got started, I realized that my scribbled down notes weren't all that clear. Again, I thought to myself what can possibly go wrong and carried on with what I thought was a sensible way forward. In the oven it went and I was feeling pretty pleased with myself. I'd created a complete mess in my kitchen but I was proud. Proud that I was well on my way to making not only my first ever loaf of gluten free bread, but my first ever loaf of bread. This wasn't so hard I thought to myself. I can live with this.

Well, that feeling didn't last long. My creation was an inedible brick. Useful perhaps as a doorstop, but totally inedible. That bubble of baking confidence may have been well and truly burst, but some valuable gluten free lessons had been learned. Firstly, half-baked (pun intended) scribbles do not make a proper recipe. Secondly gluten free baking is very sensitive to doing things wrong. Ingredients are there for a reason and any short cut is just likely to land you in trouble.

Humbly, I've come to learn how gluten free baking should be done over the years since then. I've learned that with careful planning and patience you can still enjoy baking as a celiac. My advice to anyone starting out on this journey that is gluten free living would be to invest in some good quality cookbooks. They will teach you everything that you need to know about how to be a master gluten free baker and how you can make creations that everyone wants to eat.
