Getting Started With A Gluten-free Diet

You or someone you know has been diagnosed with gluten intolerance and now the big question is how do you get started? The goal is to eliminate all sources of gluten from the diet. There are many ways to do so such as meal planning, reading labels, reading books and blogs such as this one and limiting certain food groups.

The main concern most people have is that any changes in lifestyle mean you will take the joy away from eating. A misconception is that gluten free foods are often bland but that really isn't the case. There are ways to still enjoy your meals such as adding spices and trying some different food. Search around online for gluten-free recipes and various cookbooks. You may find several recipes you love!

Creating a gluten free diet can be easy and there are some simple steps to get you started. The best way is to concentrate on foods that you can eat. They include:

Fresh fruits and vegetables
Meat and fish that have not been breaded, marinated or processed.
Rice, corn and potatoes
Eggs,nuts (in shells or unshelled), beans and legumes
Fruit juices, unflavored milk, whole and ground coffee beans, unflavored tea.
Oils, including canola oil.

You may already be eating these grain items and you should continue to include them in your diet. Refer to this list:

Rice
Montina
Corn
Quinoa
Amaranth
Buckwheat (kasha)
Sorghum
Soy (Soy sauce fermented from wheat is not gluten free.)

Another common misconception is that you can no longer eat breads or pasta. Many grocery stores now offer pasta products that are gluten-free. Check the label before buying these products to make sure they are made from rice, corn, buckwheat* or quinoa. *(NOTE: Buckwheat noodles are also known as Soba noodles). A lot of supermarkets also sell products made with gluten-free flour. These flours are made from potatoes, nuts, beans and tapioca.

With a little patience and practice you will have little trouble with this change in lifestyle. It is important to do as much reading as possible and understand your body.
