Fixing Turkey for the Holidays

Any type of raw poultry must never come in contact with other food. Raw poultry, or any raw meat, and the
drippings is full of bacteria that is the cause of food poisoning.

Remember, bacteria can also spread from raw meat and poultry to worktops, chopping boards, dishes and utensils.
So, to keep your Christmas food safe, remember to do the following things:

* Always wash your hands with warm water and soap, and dry them thoroughly, after touching raw poultry.

* It is not necessary to wash poultry before cooking. If it is properly done, all the bacteria will be killed
during the cooking process. If you choose to wash it, make sure that you clean all the surfaces that come in
contact with the raw poultry, including any areas that may have been splashed during washing.

* Never forget to clean all work areas, cutting boards, dishes, and utensils - all the areas that raw poultry
has come in contact with.

* Never use the same chopping board for raw poultry and ready-to-eat food without washing it thoroughly in warm
soapy water. (If possible, use a separate chopping board just for raw meat and poultry).

When you are storing raw meat, to help stop bugs spreading you should remember to:

* Always keep raw poultry away from other foods.

* Raw poultry and raw meat should be stored at the very bottom of the fridge. This will ensure that any
drippings that come off the meat will not get on any other food.

This advice applies to poultry such as turkey, chicken, duck and goose, and game such as partridge and
pheasant.
