For those sites that do have a whole bunch of links it causes the spiders to sort of spread out their attention in different directions and that loses the desired effect.

USER EXPERIENCE. If your website is designed with users in mind then you can see that overusing links may take away from the overall appeal of your site. Too many links distract users and pull them off topic. They also create a situation where they are bouncing around from site to site and not really benefiting from the information on your website. Link spamming is annoying and will drive many users to look elsewhere for their information.

Often links are a big focus because that is the main thing that people know how to do in terms of SEO management. Content is a really big deal. You need to have content that is relevant and that uses many keywords well also. These will help a lot more than other things.

If you do want to have regular fans of your website, you have to slow down with all the extraneous linking. People are tired of fighting their way through websites that have content that is full of annoying links. Good links that people will actually find helpful is what you need. When you have too many text links it ruins the website and really chases people off.
