The Enchilada came to be originally in Mexico. It was a dish that was also known in the South American countries of Honduras, Guatemala and Nicaragua. The basic enchilada recipe was corn flour or maize tortillas that are filled with meat, rolled up, and then covered in a tomato and chile sauce. A variation of the original enchilada that came from Costa Rica was made of puff pastry that was filled with Tabasco sauce spiced potato cubes.

The more modern enchilada can contain a filling of beef, chicken, seafood, vegetables, cheese or a combination of these. It is loved the world over because of its simplicity when it comes to making it and also for its exotic taste.

There are a number of enchilada recipes that are well-loved because they fit ones beliefs and health lifestyle. For those that prefer to make tortillas from scratch, all that is needed is about 2 cups of corn flour, lukewarm milk, a little baking powder plus some salt and vegetable oil. One can begin by mixing the flour and baking powder then add the milk which has been whisked with the salt and oil. Add the milk until the dough reaches an acceptable consistency. Knead the dough for a few minutes and let it rest. The dough is then divided into equal balls which are let to rest before being flattened into inch thick tortillas which are then heated in a skillet and can then be used or frozen for future use. There is some baking done as the enchiladas are then placed in a pre-heated 190 degrees oven for about 20 minutes after placing some filling in the ready tortillas.

Many dishes tend to alienate vegetarians, but not enchilada recipes. One can make spinach enchiladas where the spinach is first cooked with some garlic, green onions, ricotta cheese, butter, Monterey Jack cheese and sour cream before being scooped by the cup and placed in the ready tortillas. Once this is done, the remaining Monterey Jack and the desired sauce are poured over the enchiladas. Enchilada comes in casseroles which are made of layers of filling before being baked.

There is a chicken and bean casserole that is perfect as a nutritious meal. For those that love their meat, it is possible to make one made of chicken, beef and seafood layers. This is a great family or party dish that everyone will love.
