It is not surprising that Chef Costancio Fernandes, who churns out exotic dishes at Amboli Bar and Kitchen in Mumbai, spent his childhood in scenic Karwar, Karnataka studying and relishing seafood delicacies. Possibly thats why his specialty in culinary ability lies in seafood whether from Goan, Maharashtrian or Parsi cuisines.

With no formal training, Chef Fernandes love for food and ability to learn on the job has made him a much loved chef amongst his peers. Having started his career with Chit-Chat restaurant in Panjim, Goa he then moved to Mumbai to work with restaurants like Goa Portuguese, Viva Paschim, Tunga Regency and Coast (Manas Group Hotel). At Amboli Bar and Kitchen, Mumbai, Chef Costancio innovates with the menu and leads a happy team in the kitchen. He shares two signature dishes with MetroMela.

Prawns Ambat (A delectable prawn curry prepared in coconut, chilies and tamarind paste)Prawns Ambat, Mumbai, Amboli Bar and Restaurant

Preparation time: 20 minutes

Ingredients
Prawns ( cleaned and de-veined) - 300 gms
Onion - 1 medium sized
Tomato - 1 medium sized
Raw Mango - 4 slices
Oil - 2 tspn
Coriander leaves - 100 gms
Grated Coconut - 1/2 shell
Green Chilies - 4 nos
Red chilies - 2 nos
Tamarind - 20 gms
Ginger - 1/2 inch
Garlic - 7-8 Pcs
Cinnamon - 2 Pcs
Cloves - 3-4 Pcs
Cumin Seeds - 1 tsp
Turmeric Powder - 1/2 tsp
Salt to taste

Method
Grind coriander leaves, grated coconut , green chilies, red chilies, tamarind, Ginger, Garlic, Cinnamon, cloves, cumin seeds and turmeric powder to make masala paste (Ambat masala). Marinate the prawns with salt and turmeric. Heat oil in the frying pan. Saut onion and tomato till it is well done. Add prawns and raw mangoes. Slowly add the Ambat masala and adjust consistency by adding water. Add salt as per taste. Stir well to coat the prawns uniformly with the masala and cook for 3-4 minutes. Serve hot with steamed rice.

Pomfret Goan Curry (A traditional fish curry from Goa)Goan curry, Amboli Bar and Restaurant, Mumbai

Preparation time: 20 minutes.

Ingredients
Promfret - 350 gms
Onion - 1 medium sized
Tomato - 1 medium sized
Green chilies - 2 Pcs (finely chopped)
Tamarind - 10 gms
Oil - 2 tsp
Grated coconut - 1/2 shell
Red chilies - 3-4 nos
Cumin seeds - 1 tsp
Coriander seeds - 2 tsp
Ginger - 1/2 inch
Garlic - 4 nos
Turmeric powder - 1/2 tsp
Salt to taste

Method
Grind grated coconut, red chilies, cumin seeds, coriander seeds, ginger, garlic, tamarind and turmeric powder to make the masala paste. Marinate promfret with salt and turmeric powder. Heat oil in the frying pan. Saut onion and tomato till well done. Add green chilies and saut for 2-3 minutes more. Slowly add promfret and the masala paste. Stir well to coat the promfret with the masala paste. Add water to adjust consistency. Add salt as per taste. Cook for another 5-6 minutes. Serve hot.
