In this series of articles about preparing and serving fresh coffee, we have discussed many different ways of preparing everyone's favourite brew. In this article we discuss the filter drip method.

This is a very popular and easy method of preparing delicious hot coffee. The simple set up consists of a filter paper containing a small amount of ground fresh coffee. Water is then slowly poured into the filter which mixes with the coffee grinds before falling into a collecting container below the filter. This is often a glass jug.

Although this operation can be performed manually, it is easier to use in the form of a filter coffee machine available in most kitchen stores and electrical retailers.

The common domestic filter machine has a small reservoir of cold water that is replenished manually. A plastic funnel or basket helps keep the filter paper in place. As soon as the correct temperature is reached, the water starts to drip into the ground coffee and starts the infusion process. The brewed coffee drips through the filter into a jug below. A hot plate keeps the beverage warm ready for serving into coffee cups. Simple domestic coffee machines like these are available all over the world for just a few pounds or dollars. They have proven to be a very reliable and cheap method of bringing fresh hot coffee to the masses.

Once the machine has finished its cycle and all the coffee has dripped through into the jug below the hot plate will keep the coffee hot for many hours. To enjoy the coffee at its best, the beverage should be consumed within half an hour or so. Excessive time on the hot plate will impair the coffee flavour and it will tend to thicken as evaporation occurs.

The domestic versions of the drip method coffee machine are often cheap and made of plastic with low cost electronics. However, commercial systems that brew large quantities of coffee often use a similar process. These bulk coffee brewers are made of robust stainless steel , have large filter papers and baskets and are plumbed into the main water supply. They still use the principle of the drip method of brewing coffee however, despite their size and cost.

Using the correct grind size of coffee is imperative. If too fine a grind is used the filter paper will clog up and the beverage will be unable to pass through the paper into the jug below. This can be very messy as the filter becomes full and overflows. If the grind of the coffee is too big the coffee will be very weak. Medium grind coffee usually gives the best results. For a standard 3 pint (1.7 litre) flask of coffee 50-80 grams of ground coffee should be used. A typical brew time is 5-7 minutes for a standard flask of coffee.
