Chili peppers of different color, size, shape and taste are available for purchase everywhere, and are the signature to one of the planets most loved cuisines. Within Mexico alone they grow over one hundred sixty different varieties. While a few of the dishes in Mexican cuisine are hot in flavor, the vast majority are simply seasoned lightly with mild peppers. The amount of heat in chilies varies greatly from very mild to inedible. It is normally a wise course of action to wear gloves when handling hot peppers and prevent contact with the eyes and skin. Wash hands, cutting boards, knives and other places that are exposed to the peppers.

Roasting over an open flame takes some of the heat out of the chili and adds a rich texture and flavor. Roasting can take place over a burner on the stovetop, in the oven, on the charcoal grill or open flame. The procedure is relatively simple, and worth the endeavor. As the exterior begins to roast, the chilies will become softer. The skin may become burned and black in color. Place the chilies into a paper sack and tightly seal right after roasting. The ensuing steam assists the charred skin drop off the pepper.

The roasted peppers are now ready for use in your favorite Mexican recipe. Your favorite salads and soups can be topped off with finely diced or thinly sliced chunks. Add to fresh homemade authentic and modern style salsas and dips. Your favorite Mexican side dishes and main courses such as fajita and enchilada, taco and burrito dishes are excellent for employing the finished peppers.
