The Perfect Donut
What Could be better that a cup of coffee and fresh donut.

There is nothing more satisfying than a cup of fresh brewed coffee and a warm fresh donut.
While the level of popularity of highstreet donut chains has never been higher, the satisfaction of making your own batch of hot donuts in your own kitchen is hard to beat.

Making your own donuts is not that complicated, so prepare to impress.

You will need to have the following ingredients

For the Donut Dough Mix
-----------------------
2 (.25oz / 14g) packets of active dry yeast
1/4 cup (60ml) warm water
1 1/2 cups (355ml) lukewarm milk
1/2 cup (100g) white sugar
1 teaspoon salt
2 eggs
1/3 cup (70g) shortening
5 cups (625g) all-purpose flour
1 quart (945ml) vegetable oil for frying

For the Glaze
-------------
1/3 cup (75g) butter
2 cups (250g) confectioners' sugar (Icing Sugar)
1 1/2 teaspoons (8ml) vanilla extract
4 tablespoons (60ml) hot water or as needed

Equipment:
Large heavy based frying pan or deep fat fryer
Large mixing bowl
Spatula
Wire cooling rack
Kitchen paper towels
Electric Mixer or whisk
Rolling pin

Here we go....

Sprinkle the yeast over the warm water, wait for around 5 mins, or until it starts to foam.
In a large mixing bowl, mix together the foamy yeast mixture, milk, salt, sugar, eggs, shortening,
and 2 cups of the flour.
Mix for a few minutes at low speed, or stirring with a whisk or wooden spoon.
Beat in remaining flour 1/2 cup at a time, until the dough starts to come together and no longer sticks to the bowl.

Now for the hard work, layout the dough onto a flat surface and knead for around 5 minutes, or until smooth and stretchable.

Wipe out the mixing bowl & lightly grease, then place the donut dough back into the newly greased bowl, and cover.

Set in a warm place to rise until the dough roughly doubles in size. The dough is ready to use if you touch it with your finger, and the indention you made remains in place.

Turn the dough out onto a floured clean flat surface, and gently roll out to 1/2 inch thickness.

Cut with a floured doughnut cutter. If you don't have one, then a round cookie cutter or some handywork with a small knife will do. You can either make a hole in the center if you intend to just glaze the donuts, however if you aim to insert jam filling, then its best to just use a round cutter.

Let the doughnuts sit out to rise until they double thier size again.

Cover loosely with a clean dry cloth.

Now for the Glaze

Melt the butter in a pan over medium heat. Stir in confectioners' sugar and vanilla until combined and smooth.
Remove from heat, and stir in hot water one tablespoon at a time until the icing is somewhat thin, but not watery.
Set aside.

Heat oil in a deep-fryer or large heavy frying pan to 350 degrees F (175 degrees C).

Slide the doughnuts into the hot oil using a wide spatula. As the donuts rise to the surface flip them over.
Fry doughnuts on each side until golden brown. Remove from hot oil very carefully, move them to drain on the wire rack.
It will be advantageous to place some kitchen paper or newspaper under the wire rack to catch excess oil and glaze otherwise it will end up all over the bench.

Dip doughnuts into the glaze while still hot, and set back onto the wire rack to drain off excess and cool.
You can also inject jam filling at this point if needed.

Congratulations all you need to do now, is crank up the coffee machine, sit back and enjoy.
