Eggplants – Ease into Health
Eggplants (called ' aubergine' in France) belong to the same family of vegetables as sweet peppers, potatoes, and tomatoes, In fact, they grow like tomatoes. They hang from a vine that is several feet in height.
There are different varieties of eggplant. Taste and texture does vary slightly according to the type. Of course, the most popular variety in North America is the glossy, deep purple kind. Yet eggplant also comes in jade green, lavender, orange, and a yellowish-white. When eggplants were introduced in Europe, they were used as a decorative garden plant for centuries.
Eggplants can range in size from a tiny tomato to a much larger zucchini. Eggplants can be eaten usually either with or without their skin. The larger ones and yellow/white eggplants, however, have extra tough skins.
Eggplant is a wonderful source of dietary fiber, potassium, copper, manganese, and thiamin (vitamin B1). It is also a good source of vitamin B6, folate, magnesium, and niacin. Researchers in Maryland have found that eggplants are rich sources of phenolic compounds (antioxidants).
The main phenolic compound (one of 14) found in eggplant is one of the most potent free radical fighters. Therefore, it is believed that eggplant helps to prevent cancer and bad cholesterol. Actually, the helpful phenolics are also responsible for giving eggplant its bitter taste. Black Magic, a commercial eggplant cultivar resembling U.S. market types, was found to have nearly three times the amount of antioxidant phenolics as other eggplants in the study.
Eggplant looks hardy but it is a perishable vegetable. It is sensitive to heat and cold and does best at 10 degrees Celsius (50 degrees Fahrenheit). The distinct taste and spongy texture of eggplant allow it to work well in dishes as a complementary flavor. It helps to provide balance in a recipe.
Eggplant can be used in interesting ways. Puréed roasted eggplant mixed with tahini and lemon juice can be used as a dip for vegetables. Miniature Japanese eggplants look and taste great when stuffed with pine nuts and roasted peppers. Mix cubed, baked eggplant with grilled peppers, lentils, onions, and top with balsamic vinaigrette. Ease into health with the antioxidant-rich eggplant.
