The added pressure that you are both racing against each other to finish the puzzle can keep her mind occupied from seeing the message on the puzzle before it is finished, spoiling the surprise. Once she finishes it and reads the message, prepare to kneel and pop the question.

Leave a trail leading towards you.
You can still be creative and unique even if you just do your proposal at home. Leave a trail through different parts in your house starting from the front door of your house leading to you in another room. Make sure that you are finished preparing everything before she gets home. Leave small notes along the way, telling her how much you love her. Make sure that you already have your ring at hand before she gets to the end of your trail.
