There are five species of chili which have been domesticated yet many more grow wild, although for basic information chili cultivars can be segregated in to three groupings, that is to say bell peppers, sweet peppers, and hot peppers. Most of the popular varieties of chili peppers are seen as falling into one of these categories or as a cross between them.
The chili pepper pods are the berries of the plants and can be used direct from the plant, although in the west a lot of the chilies are either dried or pickled, or preserved in some form due to the long distances traversed by suppliers in order to get them into western markets. Many of the dried preservation methods involves the end product being used in the form of a powder; other forms of preserving are a mix of whole peppers, sliced and diced or in paste form.
However, it cannot be denied that peppers have changed the face of culinary preparation throughout the world and not surprisingly, vegetarian dishes fair extremely well from the introduction of differing strength chili peppers. Indeed, recipes which contain many of the varieties of bean such as pinto, red, black, butter and kidney beans are especially receptive to the addition of varying strength chili to taste.
