Cherry Pie For Diabetics

Most of the time diabetics are reduced to helping with small chores such as cleaning the ice cream scoop when other people are enjoying pies. Diabetics can also take pie if it is prepared with a recipe that is not harmful to their health. A pie pastry and cherry pie is very tasty and healthy for the diabetics. The recipe is made up of the following
.
CHERRY PIE

Crust

3/4 cup of ice water

1 teaspoon of white vinegar

2 cups of all-purpose flour (divided)

3 Tablespoons of SPLENDA granular

7 Tablespoons of high quality vegetable shortening

Filling

2 cans of tart red cherries in the water.

1/4 cup of cornstarch

2/3 cup of SPLENDA granular

1/4 teaspoon of almond extract

2 teaspoons of fresh lemon juice

3-4 drops of red food coloring (optional)

CRUST

Pour vinegar into a measuring cup then add the ice water. Place half of the flour into a bowl then gradually add the mixture of vinegar and water to it using a wire whisk. The combination should be well mixed. SPLENDA should be combined with the remaining amount of flour in the other bowl. Shortening should be added at this stage. The shortening should be cut in using two knives or a pastry cutter until this mixture becomes crumbly.

The water and the second bowl of flour mixture should be added gradually. The amount that is added should be just enough to make the dough bind together. The dough should be divided in half. Each half should then be gently patted into a circle on a floured surface. The circles should be covered with a plastic wrap and be put into the refrigerator to chill for half an hour. This time should be used to make the filling.

FILLING

The cherry liquid should be drained through a sieve into a saucepan that is of medium size. The SPLENDA and cornstarch should be mixed together in a bowl. After mixing well, pour it into the saucepan and stir well. Add lemon juice and almond extract. It should be cooked over medium heat. Stirring should be done as it cooks.

The mixture will simmer for 3 to 4 minutes and the sauce will thicken. This is the point to remove it from the heat. Food coloring can be added if there is a desire, but it is not mandatory. Place cherries into a medium bowl and then pour in some liquid. Fold gently using a spatula for mixing without mashing the cherries. Put the cherries into the bottom pastry, which you have placed inside a pie pan. Cover the top with the other pastry circle and put four or five slits in the dough. The pastry should not be coated with egg or butter using a pastry brush. The pie should be baked for 50 to 60 minutes. Slicing should be done after an hour of cooling.
