Broccoli, Orange, and Watercress Salad Side Dish
These lovely Broccoli, Orange, and Watercress Salad side dish recipes have certain Asian overtones, and is very light and refreshing, and, as it is, can make for a simple little lunch or brunch, or will work in any number of settings, such as before an Asian themed lunch gathering, or perhaps a California Contemporary Cuisine theme, or even a New York Bistro style setting.
Ingredients:
Dressing ~
* 2 tbsp rice vinegar
* 1/4 cup cider vinegar
* 1 tbsp olive oil
* 2 tsp sugar
* 1 tsp honey mustard
* 1/4 tsp sea salt
* 1/8 tsp black pepper, coarse ground
Salad ~
* 4 cups iceberg lettuce
* 3 cups small broccoli florets
* 3 cups watercress
* 2 cups orange sections (about 4 oranges)
* 1/2 cup almond slivers (optional)
Procedure:
1. First, to prepare dressing, combine vinegars, oil, sugar, honey mustard, salt, and pepper in an Italian dressing jar, seal tightly, and shake vigorously. If not serving immediately, chill until it is time to serve.
2. Thinly slice 4 cups worth of iceberg lettuce. Retain the rest of lettuce for other recipes.
3. Steam 3 cups worth of broccoli florets in either a bamboo steamer or a double boiler. If you dont have access to either, then you can get a microwave steamable bag of broccoli in the frozen vegetable section of your local supermarket.
4. Trim about 3 cups worth of watercress.
5. Take oranges, peel and section into desired size.
6. Combine lettuce, broccoli, watercress, almond slivers, and orange sections in a large bowl and gently toss with dressing until well coated.
Tips:
