A great breakfast menu makes a great day!
When you wake up in the morning, your stomach is empty and it needs to be filled, else entire day you will suffer from headache. For office going people, breakfast is quite vital since they eat straight during lunch hours after working for several hours between breakfast and lunch. Also, for the school and college going, having a breakfast is really important since the kids then directly eat at lunchtime too, which is a good long gap of five to six hours after waking up. The key for being properly nourished, well fed, and be able to concentrate on work is a healthy breakfast. A healthy breakfast menu is the solution to every health and concentration problem any working or school and college going individual might face. Here are a couple of good recipes which people can eat for breakfast.

Alaska Sandwich
15 1/2 ounces canned Alaska salmon
1/3 cup plain nonfat yogurt
1/3 cup chopped green onions
1/3 cup chopped celery
1 tablespoon lemon juice
Black pepper, to taste
12 slices bread
Drain and flake salmon. Stir in remaining ingredients except pepper and bread. Season with Pepper to taste. Spread salmon mixture on half of bread slices; top with remaining bread. Cut the bread into halves or quarters. This recipe makes six sandwiches.

Another recipe is California Chicken Cobb Sandwich.
Two small loaves French bread
3 skinless, boneless chicken breast, grilled
12 pieces bacon, fried crisp
1 avocado, peeled and seeded
12 small, crisp lettuce leaves
Dressing
4 ounces cream cheese, softened
6 tablespoons mayonnaise
4 ounces gorgonzola or blue cheese, softened
Combine ingredients until mixed well.
To assemble sandwiches: Slice the bread into 24 thin slices; toast the bread lightly on both sides. Spread the inside of each piece of bread with sandwich dressing. Cut the grilled chicken breast into diagonal pieces to fit the small bread rounds. Top 12 pieces of bread and dressing with Chicken, bacon pieces, avocado slices and lettuce. Top with remaining bread that has been spread with dressing. Serve at once or cover with clean, dry lettuce leaves to keep moist. A couple of sandwiches are not enough and become repetitive daily.

Here is one more recipe:
Chicken Cherry Breakfast
2 cups cubed cooked chicken
1/2 cup dried tart cherries
3 green onions, sliced
1/2 cup mayonnaise
1/4 cup plain yogurt
1 tablespoon lemon juice
Freshly ground black pepper, to taste
Lettuce leaves
Chopped fresh parsley
2 to 4 croissants
Combine chicken, cherries and onions in a large bowl; mix well. In another bowl, combine mayonnaise, yogurt, lemon juice and pepper; pour over chicken mixture. Mix gently. Refrigerate, covered, 1 to 2 hours. Spoon chicken salad onto sliced croissants; top with lettuce. Garnish with parsley, if desired. This makes two to four servings.

The following recipes are very easy to make and don"t consume much time. Further, they are delicious and will make a good start to the day for all those who require a good start.
