Adobo- A Stew Recipe That Identify A Filipino

Filipino is known for its salty food, it is believe that people that lives nearby the sea craves for salty salt and Filipinos is one of them. Filipino use salt to preserve food such as dry fish and use soy sauce to marinate pork or beef for tapa or Beef steak. Adobo is a popular Filipino stew recipe that uses soy sauce and salt for flavoring, it is usually cook with chicken and pork, it is also prepared using seafoods and vegetable. The meat is boiled with vinegar, soy sauce, garlic, peppercorn, bay leaf. It could be cook with sauce or dried by braising on its own oil. Some includes gata and prefer the recipe spicy and it is known as adobo sa gata.

Origin of Adobo:
Adobo recipe originally is a Spanish recipe, but during that era, Adobo is cook using just using salt as a flavoring but it is believed that when Chinese introduces soy sauce Filipino started to use it instead of salt. Now a days Filipino still cook adobo in different ways, as different region has its own method for preparing adobo. Other use gata for adobo just like in Bicol as their region has a lot of coconut trees. Other region use natural vinegar such as sukang sasa as their place is an organic vinegar produces. In Batangas adobo is cooked with achuette (annatto), and adobo is also use as a filling for pandesal (Filipino traditional bun). Here is a sample of adobo recipe.

Ingredient:
kg chicken cut into cubes
kg liempo pork cut into serving pieces
1 cloves of garlic, minced
tsp ground peppercorn
cup of vinegar
1 cup of soy sauce
Vetsin
Bay leaf
Coconut cream (optional)
Siling labuyo (optional)

Direction for Cooking:
Wash chicken and pork, drain to remove excess water. In pan bring to boil pork and chicken along with soy sauce vinegar, ground peppercorn, vetsin, bay leaf, and garlic. Bring to boil and simmer for 30 minute or until the pork tenderize, add vetsin and salt if needed.
Optional: Add coconut cream when the sauce is almost dry, let the coconut cream dry and add vetsin.
In my method of cooking we used chicken and pork together but the meat can be used alternately, Tilapia or any other of fishes can be used also instead, kangkong or String bean can be also cook for adobo. Truly adobo is one of the most favorite recipe for Filipino though the time.
