A Cake Recipe Using Chocolate And Zucchini

We all should do a little more home cooking than we are currently doing, and we will chat more on that subject shortly.

But before that, here is a yummy and extraordinary cake recipe to get you going.

The contents might look a little unusual for a cake, but I strongly recommend that you have a go anyway.

You will be surprised and delighted that you did.


An Unusual Cake Recipe Using Chocolate and Zucchini (Courgette)

You Will Need:

One teaspoon ground cinnamon
1 t. vanilla flavoring
2 A half cup of white flour
Half C. normal sugar
Two teaspoons bicarb of soda
1 cup demerara sugar
Half C. dairy butter
3 courgette, circa 6 inches long, shredded (roughly 2 cps)
Half C. vegetable oil
One tsp common salt
1/2 C. buttermilk
three free-range eggs
four T, cocoa
A half cup of to One cupful choccie chips



Directions:

Whilst you are preparing the ingredients, set your oven so it preheats to 325 F.

Lightly grease a 9" x 13" cake pan and put to one side.

In a large mixing bowl,combine sugars, the butter and the oil.
Break in the eggs, buttermilk, and vanilla and mix well.

With a sifter or sieve, sift the cocoa, flour, baking soda, cinnamon and salt to make one.

Add the powder mix to the wet mix and stir well

Mix in the shredded zucchini and mix well.

Pour it all into the 9" x 13" tin and sprinkle chocolate chips over the top.

Put in the hot oven and cook for 45 mins.

Allow it to cool a little, remove from tin and place on a rack to cool before serving.

So Why Cook at Home?

Most families think that the kitchen should be the living breathing soul of the family, and there can surely be no debate that preparing meals at home is a great social bonding experience. Unhappily, in these hectic times that we live in, most family members find it very tough to set aside the time required to cook at home, and as a result their family life suffers.

The strange thing is, if families really considered the issue, they would find that home cooking is still the best choice. It is usually a good deal more cost effective, frequently a good deal quicker, and, as it requires less car journeys, is a good deal more eco-friendly.

What amazes the majority of family members, is the fact that it is generally faster than dining out. When you count the time spent preparing to go out, driving to the eating place, the time taken to place your order and then waiting for the meal to be delivered, it is fairly certain that preparing meals at home is much faster.

I am sure you are already of the opinion that cooking at home is more healthy, but this is only the case if you do it right. Simply eating in your own house isn't healthy if you are eating prepacked meals and take-aways. These are more often than not comparatively poor worth and nowhere near as beneficial as a tasty home-made dinner cooked with garden-fresh fruit and vegetables.
