10 Leftover Meatloaf Dishes

Do you like eating leftover meatloaf? If you don't, there are many interesting to transform last night's meal into tonight's dinner. Below is a list of some of them. Use them to inspire you into creating something of your very own.

* Each time you make too much of something, you can divide it into individual portion sizes, date, label and stick them in the freezer. This way, they are easily available for reheating.

* Sloppy Joes: Fry the meatloaf in a pan with barbecue sauce, mustard and ketchup. Let it simmer on low heat for 10-15 minutes. Slather the meat mixture onto bread buns and serve with pickles.

* Spaghetti Sauce: Crumble the meatloaf. Place the meat in a saucepan then add two cans of tomatoes, 1/2 tablespoon of Italian Seasoning, and 1 teaspoon of salt. Let it simmer for 15-20 minutes and serve with your favorite pasta.

* Easy Chili: Crumble up your leftover meat loaf and put it in a pot. Add a can of rinsed and drained kidney beans, a few cans of tomato sauce or ground or chopped tomatoes with juice (you can thicken it with a tablespoon of cornmeal if it is runny), a tablespoon of chili powder, 1/2 tablespoon of seasoned salt, and 1/2 tablespoon of brown sugar. Let it simmer for half an hour and top with cheese and sour cream.

* Shepherd's Pie: Crumble the leftover meat loaf. Add a can of cream of mushroom soup and 1/2 can of milk or water. Spread this mixture onto the bottom of a casserole dish. Next add a layer of your favorite vegetable. If you are using canned vegetable, simply drain then add. If you are using frozen or fresh vegetables, cook them first, drain then add. Spread a layer of mash potatoes on top and bake at 350 degree F for thirty minutes.

* Tater tot casserole: Prepare meat and vegetables like as for shepherd's pie. Spread a layer of chopped Velveeta or sliced American cheese on top of the vegetables. Add tater tots as topping and cook at 400 degree F for 20-25 minutes.

* Chip dip: Mix meat loaf with salsa and Velveeta, or any similar cheese. Put the mixture in the microwave until the cheese melts. Mix well and serve with tortilla chips.

* Taco Salad: Chop the meat loaf and fry over medium heat. Add a package of taco seasoning plus the amount of water stated on the package. Let it simmer for 10-15 minutes. Serve with tortilla chips, lettuce, tomatoes, cheese, and sour cream.

* Biscuits and gravy: Crumble the meatloaf. Put the meat in a sauce pan and set to medium heat. Add two tablespoons of flour and stir until the meat is coated. Next add in two cups of milk and stir until it the mixture thickens. Add salt and pepper to taste and drizzle over biscuits.

* Patty Melts: Slice the meat loaf into burger thickness. Place a piece of buttered bread on a griddle or frying pan with the buttered side down. Put a meat loaf slice on the bread. Add a slice of cheese on top. Toast another piece of bread on the pan for the top. Add sauted onion rings put on top of the meat loaf and cheese combination. Put the other piece of bread on top of it and serve.
